Nigella Lawson’s Chocolate Pistachio Fudge
The daughter was on my case for ages…”Want to make FUDGE!!!” She stacked all my chocolate books in a pile & copied down recipe after recipe, my pleas falling to deaf ears that the books were mine & here to stay. DH was witness to the pointless conversation! She would have none of it…aaaaaaaaaaargh!!

She writes down all her favourite stuff from my blog just in case the ‘www’ disappears one fine day with my precious blog! Horror of a thought…but nevertheless, a thought! As fate would have it, while the DH was surfing channels that night he hollered for me…transfixed by Nigella Lawson, the Domestic Goddess herself. Nigella Express was racing through the show & she was making chocolate fudge. Coincidence…& I badgered him thereafter to tell me whether it was her mesmerizing self or the fudge that caught his eye!
…with her little helping hand. No squabbling for once!
Chocolate Pistachio Fudge (Originally published by Nigella Lawson)
Ingredients:
350gms – dark chocolate / roughly broken up
Condensed Milk – 1 can (4 oz)
Butter -2 tbsps
Salt – 1 pinch
Shelled pistachios – 1 cup (can substitute it with some other nut of your choice, but this nut is GOOD!)
Method:

Melt the chopped chocolate, condensed milk, butter, and salt in a heavy based pan on a low heat.

Put the nuts into a freezer bag and bash them with a rolling pin, until broken up into both big and little pieces.

Add the nuts to the melted chocolate and condensed milk and stir well to mix.

Pour this mixture into a 9-inch square foil tray, smoothing the top. (The daughter sprinkled the top with some pistachio slivers.)

Let the fudge cool and then refrigerate until set.

You can then cut into small pieces approximately 3/4 by 1 3/4 inches or cutting 8 by 8 lines in the tin to give 64 pieces.
