Chocolate Yogurt Cake … deliciously healthy!

There was a time when I had my fixed list of things to bake, & everyone was pretty satisfied & happy. I would bake brownies, then oatmeal cookies, then muffins,then a pound cake, chocolate chip cookies, lemon cake…& so on back to brownies. This loop continued until around September 2007. Then suddenly one day my browser accidentally stumbled into Jugalbandi. I couldn’t for the love of me figure out what it was all about, but I suddenly found ‘real’ recipes, beautiful pictures, & people who could talk to each other. Yes, I had been living under a rock all along. I hung around from time to time, clicked on unsuspecting links & reached other blogs! Goodness, there was a whole world waiting to be discovered. Then one fine day I mustered up the courage & secretly made my own blog. The hub was let in a few days later, & he was so proud that I had my own place on the web!! Now, of course, everything’s changed. We have exuberant bloggers, active, enthusiastic, supportive, hilarious , talented people; each willing to open up their world to others from time to time, share their mastered recipes, give out heirloom secrets & generally enjoy this virtual world. One wish…I wish I had more time! Something else changed too. I’m now on a ‘try everything at least once’ route & the family has never had it soooo good! It adds great variety to the table, snack box & quality of life. Earlier the family was happy; now they are ecstatic, & checking the fridge for desserts ever so often!! LOL!! Ever since the colours on my blog changed, I’ve gone into a chocolate overdrive. This after swearing that I wouldn’t do any more chocolate for a while. But than again, life’s so unpredictabe! Saw this Chocolate Yogurt Cake at AK Mom’s blog @ What’s Baking, & it’s been on my mind for long. It sounded healthy & full of yogurt (1 1/2 cups) & looked really, really nice & moist. With no snack in the house the other day, I grabbed the opportunity to try something new. The cake came out really nice & chocolaty & with a great crumb. Only just realised that there was a vanilla drizzle to it too, but ours tasted delicious even without it!
CHOCOLATE YOGURT CAKE as adapted from AK Mom’s recipe here
Ingredients:
Flour – 1 1/2 cups
Wholewheat flour -1/2 cup
Cocoa – 2/3 cup
Instant Coffee – 2 tbsp
Baking Soda – 1 tsp
Baking powder – 1 tsp
Pinch of salt
Butter – 1/2 cup; at room temperature
Sugar – 1 cup
Eggs – 2
Yogurt – 1 1/2 cups
Vanilla Extract – 1 tsp
Coffee Extract – 1 tsp (optional)
Method:
  • Grease well & flour a 9″ bundt pan, & preheat the oven to 180C.
  • Sift both the flours + baking powder + baking soda + salt + cocoa. Keep aside.
  • Beat the butter & sugar. Add eggs & beat again. Add the coffee & vanilla extract & beat.
  • Now alternatively add the flour mix & yogurt till well incorporated. Don’t over mix. The batter will be quite thick, ie, not a flowing one.
  • Turn into bundt pan, level out & bake for 45 mins to an hour/until done. Slide a sheet of foil over the top loosely if you see it browning too soon.
  • Once done, cool in pan for 5 minutes, turn out on rack.
