Vegan Rose Coconut Pudding … simple 4 ingredient goodness!

The Rose Coconut Pudding sets beautifully, has a wonderful wobble to it and tastes like Spring. I flavoured it with a rose syrup for Holi but you can pretty much use any flavour you like. I tried one as a plain coconut version ad that turned out refreshingly good too.

Genoa Fougasse turned out to be the best bread I’ve baked in a while. Sometimes you just need ‘bread luxury’, and this became that and much more. The difference here was the new level of deliciousness brought on by the addition of a gourmet spice blend, Genoa, from Sprig. It brought the flavours alive, went beautifully with the cheese and walnuts within, making it our new favourite bread at home.

My version of the quintessential ‘Caramel Custard’ that showed up on our frugal dessert table quite often when we were young. This one is slightly more luxurious than the wobbly one we had as kids. It’s baked, not steamed. If you are making one large pudding, steaming it in the pressure cooker is quicker.

The spices we cover for The Masala Dabba #3 are cardamom, whole pepper and turmeric. I think I love the spice journey best. We enter month #3 of our collaborative spice journey with exploring or rather ‘shooting’ spices. March is synonymous with Spring, new beginnings and a whole lot of colour. This March also had holi, the festival of colour, which inspired me to shoot several times through the month.
