OAT WALNUT WAFERS…From The Australian Heritage Cookbook

I first bumped into Susan, the Food Blogga gal, last year over her Eat Christmas Cookies event…& thereafter never let her go. A charming blogger, beautiful posts & a wealth of trivia about whatever she posts, Food Bloggas’ is one of my fave haunts. She works her charm into my world, & then, added bonus, there’s Dermadoc who drops by inadvertently at times too…LOL! Her Mom & Dad are accomplished foodies too…& Susan’s blog is fun all the way. I’m late sending in an entry this year; but better late than never, I’m racing these cookies to Eat Christmas Cookies, Season 2, an event that I love!
This recipe is from a cookbook called the Australian Heritage Cookbook, that I literally studied from cover to cover, as I had to sit by my daughter when she was unwell in Sydney. Since I was housebound for a couple of days, I made the most of my time by reading this lovely cookbook that belonged to Uliana.
This is a really simple cookie; nutty, delicious & healthy. It’s main grain is ‘rolled oats’ & I’ve added chopped walnuts to the basic recipe. The cookies weren’t thin & didn’t spread out like wafers, yet, they had a nice bite to them. We loved them & the hub is already asking when I’m going to make them again…phew…only after I post the recipe…sez mua! That’s my priority at the moment!
OAT WALNUT WAFERS from The Australian Heritage Cookbook, pg 104 Ingredients:
Rolled oats – 1 1/4 cup (I use Quaker oats) Butter – 90 gms; melted
Egg – 1; lightly whipped with a fork Sugar – 3/4 cup Flour – 2 tbsps; self raising (I added a 1/4 tsp of baking powder & a pinch of salt to plain flour) Walnuts – 1/2 cup; chopped (optional) Method:
Preheat the oven to 180C. Grease 2 baking trays.
Place oats in a bowl, pour over melted butter, & allow to stand for 10 minutes to soften oats.
Mix in the eggs, sugar & flour ( & walnuts if using).
Place small portions, well apart on greased baking trays & flatten with the back of a spoon.
Bake 10 minutes, till brown. Cool a few minutes, & then remove carefully to rack.
Note: I added a spoon of honey into half the dough to bind it, coz I thought the dough wasn’t staying together too firmly initially, but it worked fine both ways, with & without honey.

Lovely cookies. I like to sneak in oats in cookies to the family. They just are so good for you and kids are going thru a phase where they don’t want oatmeal, so cookies are the best bet.
HI Deeba, I love this healthy oat cookie. It was a pity you could not make them for your~daughter over there in Sydney! A little bear and a cute tin full of these crispy yummies would have made her feel like new again! You must have been so worried about her in a strange country and all! My aunt lived in Sydney for something like 13 years, but is back in South Africa. Sydney is beautiful!
