Colourful & delicious…Cheesecake Pops!

It’s the DARING BAKERS time of the month again…& each challenge means breaking new ground. With never a dull moment, & now even a new site for the Db’s, we’re all back to it again. Posting today, there are gonna be LOADS of Cheesecake Pops POPPING up all over the net.

TASTEFUL ENTHUSIASM? Yes indeed!

These are just the perfect party poppers for the summer, delightful to look at, a novel challenge this month…hosted by Elle @ Feeding My Enthusiasms & Deborah @ Taste and Tell this month. The April challenge call was for CHEESECAKE POPS!! To tell you the truth, it was the first I had ever heard of these delightful mouthfuls! You can find the recipe at here & here.

En route to the freezer…

As the gals say, “These cute little bites of cheesecake, held on a stick and dipped in chocolate and, if you like, decorations, are sure to make you smile. The cheesecake is New York style, the pops can be jazzed up with different toppings, and they are FUN…just right for a party. They are from Sticky, Chewy, Messy, Gooey by Jill O’Connor.”

DH asked if these were part of the Dare Devil event? The kids lets out peeeeeeeeeeeeeels of laughter!! United, they corrected him “Daring Bakers!!!”

Cream cheese is imported where I live, in India, & quite exorbitantly priced. That many ounces would cost me quite an arm and a leg, but I did want to try these beauties! Word went out to Lisa & Ivonne, who got their resources together & were fantastic; they rushed in as many substitutes as the mind could think…unfortunately even ricotta is on the ‘imported’ list here. I finally substituted the cream cheese with a mixture of hung yogurt & blended cottage cheese. The other changes were that I added strawberry essence for flavour, & of course the lollipop sticks…unheard of here. We, the daughter & me, did a brainstorming session, rummaged through my stuff, & she came up brilliantly with bendy straws!! They were a great idea; held up well & made everything look colourful!!

Surprisingly didn’t do too badly. In fact the pops were tops!! I was sceptical about whether they would hold; they outdid me & held. Was vary of the taste & made about a dozen pops or more; too few, rued the kids, who thought they were grand. Almost binned the remaining cheesecake because I thought it was of little use; on second thoughts ran it past the kids! YUM they said…& polished it off. So I made frozen bars of the rest & dressed them up in chocolate & sprinkles…they lasted many days & we enjoyed great dessert many times over! All in all, a great choice girls! Thank you!!

Meet Lola…

In the midst of everything, the daughter decided she wanted to adopt this little ladybird much to my chagrin & even christened her Lola! All this while, I’m tempering chocolate & trying to keep my cool!! Temper & cool are not a very great combination!!

The pretty creature fluttered all over the place while I was hysterically trying to coat the pops before the chocolate hardened…this was the last thing I needed! Pandemonium hit the kitchen…& then I eventually opened the door to let the poor thing out. The daughter wept copious tears telling me how mean I was to let Lola go…a pop offered as an olive branch made me not so mean again!!

    Lola is definitely darling…The funny thing is, when I was little, I was so afraid of ladybirds! I’d run into the house screaming and crying whenever I saw one. I have no idea why…especially since those were the nice ones. Now we have orange ones that bite…

  15. You’re such a good mama! We have many adopted “pets” that don’t last the night – mysteriously disappearing in the night.

    Your Pops are Perfect!!! I love the colorful straws & variety in sprinkles. I have a friend who moved here from India several years ago & she credits CREAM CHEESE alone to her immediate weight gain of 10 lbs. She’d never had it before & would eat it with everything…. Consider yourself lucky that it’s not easy to come by there.

    Lovely pops and a great job of improvising the cheese part for the cheesecake and thos great colored bendy straws for the sticks…so pretty! Glad the kids liked them, too. Great job!

Your kids must be glad that you made them…i must go check out the recipe, as I haven’t heard of this one before…the hung-yogurt and paneer blended is a worthy substitute for the cream cheese…wonder why it is still considered such a rarity and therefore the 400 odd bucks per pack!!
