Mango Almond Roulade … making the most of the season

Mango Almond Roulade with almond whipped cream. Light. Fresh. Delicious. Part wholegrain. To make it even better, filled with fresh mangoes swathed in beautifully whipped almond cream. Some things are just better with mango!

So here’s another last minute mango based dessert to add to the last few mango desserts I shared, while we hang on to the end of the mango season. Just another clutch of days, maybe a week or so, and they’ll be gone.

However don’t panic if you can’t find some juicy mangoes. I’ve made this to great deliciousness with tinned peaches, fresh strawberries, a coffee whipped cream too {skip the almond maybe go with chopped walnuts}.

Ingredients

Almond Sponge

  • 3 eggs
  • 1/2 cup + 1 tbsp almond meal
  • 1/2 cup + 1 tbsp plain flour
  • 1 tsp baking powder
  • pinch salt
  • 1/2 cup Castor sugar
  • 2-3 drops almond extract
  • 1/2 tsp pure vanilla extract

Whipped Almond Cream

  • 300 ml low fat cream chilled
  • 25 ml clarified butter/ghee
  • 4-5 drops almond extract
  • 50 g icing sugar {adjust as per taste}
  • 1 large mango peeled , diced

Instructions

Preheat the oven to 180C and line a Swiss roll tin with baking parchment.

  • Sift together the almond meal, plain flour, baking powder and salt 2-3 times. Reserve.
  • In a bowl of the stand mixer, whip the egg with sugar on high speed to stiff peaks.
  • Add the vanilla extract and almond extract and beat again.
  • Sift the flour over the beaten mixture and gently fold in.
  • Pour batter into prepared pan, level out.
  • Bake for about 20-25 minutes until light golden brown and firm to touch. {tent the top with aluminum foil if you think it’s getting too brown}
  • While this is baking, lay out a clean kitchen towel, bigger than the size of the tray, and sift sugar evenly over it.
  • Once the roll is baked, overturn immediately {very carefully} onto the sugar sifted towel, and gently peel parchment off. Trim the edges if required.
  • Place a parchment sheet on top, and roll with the towel lengthwise, and leave to cool completely. {The longer side will be the length of the roll}

Whipped Almond Cream

  • Place all ingredients in a large bowl. Whip with an electric hand blender on the highest speed until thick.

Assembling

  • Unroll the cooled cake, place on a sheet of parchment. Spread the almond cream filling over it with an offset spatula, leaving a little border right around to avoid the filling oozing out.
  • Sprinkle over with chopped mangoes.
  • Now with the help of the parchment paper, roll it right back into a roll, pulling the paper slightly to make a tight roll. Place seam down on cling wrap and chill for a couple of hours. Unwrap gently and lay seam side down on your serving platter.
  • Sift over with powdered sugar, scatter almond slivers over it.
  • Slice with a sharp serrated knife and serve!

Peach Mango Low Fat Ice Cream… nothing screams more comfort in summer than frozen fruit dessert! I do loads of frozen yogurt every summer. The last week I looked at my fridge full of mangoes and peaches and just knew an ice cream was in the future. There are days when fro yo will satisfy the craving, and then there are days when I want to ‘up the luxury‘. Just a teeny bit. A little cream can do no harm!It was one of those days where a creamy ice cream craving was developing. It began with the trappings of  a fro yo, and ended up being a low-fat ice cream. This was such fun to make and absolutely delicious. Maybe next time, we’ll see a nice, rich, full fat ice cream. Maybe!

With stone fruit a plenty this summer, now the monsoon showers are literally drowning North India. As we wade through the streets, I think we’re looking at the last peaches and plums of the season. Cherries have been bid adieu, and peaches look set  to follow! Plums appear to be the hardiest of the lot. Mangoes, of course, will be here for a while longer, another month at least. North India has seen a really good stone fruit crop this year. The Peach Mango Low Fat Ice Cream is a wonderful and delicious way to celebrate it. Creamy, fruity, slight undertones of almond, it turned out bowl licking good. I froze some in a bowl, and piped the rest into kulfi / popsicle molds. I loved how sweetly the popsicles turned out. So easy to serve this way, and such a treat to see the kids greedily lick the sticks even when there was nothing left on them! Coco got lucky with a few licks too!It’s been a satisfying season and I really love how versatile stone fruit are. We’re looking at the fag-end of the season, so I intend to pack in as much as possible … into our tummies, and  hopefully onto the blog too!

[print_this]Recipe: Peach Mango Low Fat Ice Cream 

Summary: A refreshing and delicately flavoured low-fat frozen treat. The addition of almond extract gives this Peach Mango Low Fat Ice Cream a special flavour. This is a nice way to preserve excess fruit of summer for later use.

Prep Time: 5 minutes
Total Time: 15 minutes plus freezing time
Ingredients:

  • 5 peaches, peeled, stoned, diced
  • 2 mangoes, peeled, stoned, diced
  • 200ml low-fat cream, chilled
  • 200g hung yogurt {thick}, chilled
  • 200g castor sugar
  • Juice of 1 lime
  • 1 tbsp vodka
  • few drops almond extract

Method:

  1. This is a Thermomix recipe. You can make it with the same proportions if you have an ice cream maker or by hand too.
  2. Place chopped fruit in a bowl and freeze overnight.
  3. Place cream, yogurt, frozen fruit, vodka, almond extract, lime juice and sugar in bowl of TM. Process for 1 minute at Speed 10 till thick and smooth. Taste and just sugar if required. Process further, scraping sides with TM spatula, until well blended.
  4. Serve immediately or place in freezer safe bowl or pipe into popsicle molds in freezer.

Frozen| Mango Frozen Yogurt … guilt free indulgence

They don’t call the MANGO the king of fruits for nothing! We are well & truly into mango season here in North India, and this luscious, juicy fruit is keeping us happy! To keep in tune with the dieting divas low fat diet, this turned out to be a perfect fit … a Mango Frozen Yogurt which tasted every bit like an ice-cream, rich, smooth & divine, but was sans the cream!Maybe it was the magic of the Thermomix, or maybe this contraption I bought from Sydney recently. Whatever it was, maybe just good proportions, but this was a winner, a perfect fit for July, the National Ice Cream Month.While in Sydney last month, I couldn’t help a quick dash to Victoria’s Basement, a store I love to spend time at. Every nook & cranny is packed with tasteful and exciting things, be it kitchenware, cookware, ceramics, bakeware, small handy gadgets. I got just an hour in the store, and it was like a mad dash. I raced through the store at top speed, grabbing whatever I thought was on my list {and loads that wasn’t}.

One such buy was this Cuisipro – Greek Yoghurt/Yoghurt Cheese Maker. The cheese lover in me looked at it longingly for a precious 10 minutes, then put it back because it was for $20 and I thought it might not be worth it. Mr PAB literally forced me to take it, and that was my best buy this visit. { Disclaimer: I have not been paid to write about the product or the shop. I just love both and thought this worth sharing}.It’s just an innovative little box with a uniquely designed stainless steel strainer that fits within. You ladle your yogurt into it, shut it and leave it in the fridge overnight {or 3 days as in my case} … and voilà! Like magic I got this beautiful very think hung yogurt that I could cut into cubes too. One look at it and I knew there was mango fro yo in the very near future! I had planned on making mango ice cream {with the MacTweets Ice Cream Dreams theme in mind}, but eventually fatless my ice cream was going to be! {I made my hung yogurt with homemade fat free yogurt}.Turned out GREAT! I blitzed frozen diced mango & chilled hung yogurt in the Thermomix which is pure magic for stuff like this. The blades are S T R O N G and result in a mean puree! In the freezer for 3 hours and I was serving pretty yellow scoops! NICE!! I attempted making some pistachio macarons as well, but the high heat and humidity here had other plans … and my feet failed. Not sure if I’ll have time to try baking macarons again this month as our little pooch {Coco} is turning out to be quite a full time job. Look at her. She is the cutest but naughtiest little thing, and currently races around the house like a little rabbit!

Recipe: Mango Frozen Yogurt

Summary: A low fat, cream free mango frozen yogurt that celebrates the king of fruits in India. Smooth, refreshing and sweet, this is a great way to indulge guilt free.

Prep Time: 15 minutes
Total Time: 20 minutes {plus chilling time}
Ingredients:

  • 650gms mango, diced, {frozen as I made mine in the Thermomix}
  • 250gms hung yogurt {homemade with 2% fat, hung in fridge for 3 days},
  • 100gms powdered sugar
  • 2 tbsps honey

Method:

  1. I made mine in my Thermomix.
  2. Place all ingredients in TM bowl, and run at Speed 10 for about 3 minutes, scraping the sides if required, until smooth and crystal free.
  3. Transfer to freezer safe bowl. Serve immediately or store in freezer.
  4. If making in ice cream maker, chill both mangoes and hung yogurt well, and process all ingredients till smooth and well blended. Adjust sugar if need be. Turn into ice cream maker and make as per manufacturers instructions.
  5. Makes approximately 1 litre.
