6 ingredient Eggless Strawberry Mousse Recipe

Eggless Strawberry Mousse

The simplest, most delicious fuss free mousse you'll ever make. It's light, it's flavourful with the sweet tang of strawberries, needs very few ingredients and it has great body! Bonus : no eggs!

Ingredients
  

Strawberry Mousse

  • 150 g whipping cream 30% fat, chilled
  • 100 g white couverture chocolate melted, warm
  • 150 g strawberry compote room temperature {recipe follows}

Strawberry Compote

  • 150 g strawberries chopped
  • 50 g sugar
  • 1/2 vanilla bean shell optional
  • Juice of 1/2 lime

Macerated Strawberries

  • 200 g strawberries chopped
  • 25 g vanilla sugar

Instructions
 

Strawberry Mousse

  • Add all the ingredients to a large bowl and whip immediately until tripled in volume and pipeable.

Strawberry Compote

  • Simmer the strawberries with the sugar until very soft, stirring on and off.
  • Take off heat and strain. Stir in the lime juice. Cool to room temperature.
  • Note: Can be made a day in advance.

Macerated Strawberries

  • Stir together the strawberries and sugar. Leave to stand for 5 minutes until juicy.

Assemble

  • Spoon in macerated strawberries into dessert glasses/bowls.
  • Turn the mousse into a large piping bag fitted with a jumbo round piping tip and pipe into dessert glasses/bowls.
  • Top with fresh strawberries, a sprig of mint etc.
  • Serve immediately or refrigerate for a couple of hours.
