Lotus Biscoff Ice Cream Shake … Deep, delicious, indulgent, comforting and oh-so-addictive, one sip down and you are transported to a happy place! I think it’s the charm and ease of sometimes using Biscoff in simple desserts which makes everything sooooo delicious.
As you can see, it’s difficult not to get inspired by this cookie butter. The more I use it, the more I enjoy creating with it. Yes it’s sweet but then petite or small portion desserts is what I do mostly. A little goes a long way. The desserts you see above are recipes I’ve created over time. All eggless, easily made vegan too because Lotus Biscoff is vegan or plant based. You can find them here or on Instagram.
This Lotus Biscoff ice cream shake is a 2 minute mood uplifter, a really quick dessert shake that is satisfying to the last drop. The cherry on the cake is the old fashioned swirl of whipped cream on top that adds the quintessential ice cream shake feel. After all, what s a shake without whipped cream, right? This cream whipper does the job beautifully!
You can play around with proportions, ingredients too. Throw in some instant coffee if you like, perhaps make it with a coffee or chocolate ice cream. Use a vegan ice cream and plant based milk to make this vegan quite easily since Biscoff is plant based. You’ve probably got the ingredients on hand already, so give this deliciousness a shot asap!
Add the 3 ingredients to a blender and process for 30 seconds until smooth. Pour into tall sundae glasses, top with whipped cream, a drizzle of melted Biscoff spread and serve immediately.
Broccoli Walnut Soup … Hello winter, hello freezing temperatures. This soup is just what you need to warm the soul. It’s simple. quick, delicious and easily made vegan. Also one of my favourite soups for this time of the year.
I love soups that are simple, full of flavour and require very little prep and most of my soup recipes are just that! Anything that needs hours of chopping makes little sense to me. IMHO, nourishment should be easily accessible and fuss free. This large mug of Broccoli Walnut Soup is everything – requires staple pantry ingredients, is quick, is fuss free, is healthy, is easily adaptable, can easily go vegan … literally a hug in a mug for winter!
If you are looking to warm yourself or for a wholesome meal, this Broccoli Walnut Soup might be it. Serve it with a nice chunk of bread, maybe grilled chicken and a winter salad, sweet potato wedges … the choices are many! Oh, perhaps grate some cheddar into the soup after blending it and ooooh, it tastes like heaven!

Walnuts are also a natural thickener when added to soup, they add texture, taste and a great plant based source of omega-3 fats. Ingredients
1tbspclarified butter/ghee
1tbspextra virgin olive oil
Red chili flakes
6clovesgarlicchopped
1small onionchopped
250gbrocolli1 small head
1small potato
50gwalnuts
250mlwater
250mlcoconut milk/milk
Instructions
Dice the broccoli and potato.
Heat the clarified butter/ghee and extra virgin olive oil. Add in the red chili flakes, garlic and onion and sauté for 2-3 minutes until fragrant.
Add the broccoli, potato and walnuts. Sauté briefly, then add the water. Season with salt and pepper.
Cover and cook over low heat until the potato is fork tender/cooked.
Once slightly cooled, blend until smooth and return to the pan. Add coconut milk/milk to get the desired consistency. taste and adjust seasoning.
Drizzle over with extra virgin olive oil/smokey chili oil and top with toasted walnuts before serving.
Can I make this vegan?
Yes, of course. Skip the clarified butter and use 2 tbsp olive oil instead. Also use coconut milk or perhaps any plant milk you like. Add it gradually to get the right consistency.
What if I don’t like broccoli?
Skip the broccoli and potato, and substitute with 300g button mushrooms instead.
Can I substitute the walnuts?
You could use almonds or cashews instead.
Can I skip the nuts?
Yes, of course though walnuts have very good nutrition and health benefits.
What if I don’t have clarified butter/ghee?
You can use butter instead
What if I want added texture?
Add finely chop some broccoli florets and add them into the soup after blending it. You can also stir in chopped toasted walnuts to get a nice bite. Top the soup with croutons for a crunch!

I certainly do. My way forward is quite simple like in this Very Very Berry Smoothie made with the Blender. What a fabulous powerful appliance to have on my kitchen counter. Fresh cherries + Frozen strawberries + Tender Coconut Water + Dash of Lime + Honey/Maple Syrup if required. Two minutes to refreshing goodness!
For sweet smoothies, I pick a fruit or more {in season}, a flavour I like {vanilla, cinnamon, saffron, pie spice, coffee, chocolate}, a base to make the smoothie {yogurt, milk, buttermilk, almond milk etc}, a sweetener if required {raw sugar, honey, jaggery}.I often add ingredients to ‘up the nutrition‘. Think cooked chilled quinoa, oatmeal, almonds etc … you get the drift? The rest is taken care of by the Artisan Power Plus Blender. So you basically begin with a thick smoothie { T H I C K } since it’s got to hold up a lot of stuff on the top {so the picture looks good!!}. Choice of toppings could range from cooked quinoa, seeds, nuts, cut fruit, granola, fresh herbs, frozen berries. Smoothie Bowls are great fun to create and a great kids project in the kitchen too. Now that summer’s practically gone, and autumn’s almost here, think apples & pears, cinnamon, maple syrup, walnuts, granola, popped amaranth, pumpkin seeds …
Nut Butters like almond butter, cashew butter, tahini or then this dead easy Smooth Peanut Butter which is a staple at home. I make two jars a week, and it barely lasts. Use it in PB & J sandwiches, to make cookies with , in Thai sauces, in salad dressings, in smoothies {think chocolate peanut butter smoothie}. It is a good way to up your daily protein. My daughter just eats it by the spoonful!! You can make it chunky by keeping a 1/4 cup of the chopped peanuts initially before adding the oil and honey. How to make it – 400g roasted peanuts {I use salted} + 1/4 cup neutral oil + 1/4 cup honey. Place peanuts in jar. Process for 5 seconds. Reserve 1/4-1/2 cup for chunky peanut butter if that’s what you like. Add the oil and honey. Process until smooth. {If making chunky peanut butter, add the reserved chopped peanuts in the end and stir in}. Note: The peanut butter thickens a bit as it stands.
Did you know you can make super quick Blender Waffles in the KitchenAid Blender too? I always keep my waffles wholegrain, usually oatmeal. I did two versions and both are so fast tracked, even the poor waffle maker needed more time to heat up! One favourite are the Blender Chocolate Waffles which I like to pair with single unsweetened cream and fruit.
Just a few days ago I made Savoury Blender Oat Cheese Waffles inspired by a recipe from Martha Stewart. Those turned out exceptionally well and quite perfect. Low fat, whole grain, cheesy, garlicky too and crisp, those are my best savoury waffles to date. They also had the most perfect little pockets on top. Dips next. What’s not to love? My two favourites are Chickpea Hummus and eggplant dip. I can’t pick which one I like better, so I make both often. The hummus is smooth as can be, and so is the Smoked Eggplant Walnut Truffle Dip. Both are fabulous to have in the fridge as can be made ahead of time!
If dips are covered, can Chutneys be far behind? I ALWAYS have chutney in the fridge. I still remember my Dad making chutney and butter sandwiches when we were kids and went on road-trips. White bread, loads of butter, the depth of chutney was bliss! Here’s a chutney I made the other day for Vada Pav since I was craving them on returning from a Food Styling Workshop in Bombay.
Hari Chutney {Fresh coriander chutney} – Big bunch fresh coriander roughly chopped stems and leaves, 5 cloves garlic, 2-3 fresh green chilies, juice of 2-3 limes, salt to taste. Place 1/4 the fresh coriander in jar of blender with all other ingredients except salt. process to grind. Add the remaining coriander in 2-3 lots. I use lime juice as my liquid base. You could add a small amount of water in addition if you don’t like your chutney very tangy. Once smooth, add salt to taste. Note: Ingredient ratios are ‘andaz‘ or eyeballed. Play around with flavours that you like. My mum adds fresh mint and onion to her chutney. Use raw mango instead of lime in summer. Keeps in the fridge for a week.
And talking about chutneys here’s another I love playing around with, a Coconut Chutney. I’ve slowly mastered the art of making perfect crisp dosas {glutenfree savoury pancakes} and there’s nothing I love more. Served with a coconut chutney and quick stir fried potatoes, it’s a meal like no other! Coconut Chutney {my way}: Fresh coconut diced, 4-5 cloves garlic, 1-2 green chilies, coconut water, Greek yogurt, salt to taste. Place all ingredients except yogurt and salt in blender jar. Process until smooth. Add enough yogurt to get right consistency. Add salt to taste.
From savoury, it’s back to sweet again. Fruit purees! Smooth, delightful, indulgent, this is a quick way to dessert toppers, jams, smoothies etc.
Here’s a Jamum Mousse I made using a jamun {wild Indian Java plum puree}.There are so many ways to use fruit purees. Think breakfast, think dessert, think dessert for breakfast, see what magic fruit purees can create!
Chocolate Cherry Coconut Chia Pots {below left}: Layers – Coconut milk + maple syrup + cocoa powder + chia seeds, Coconut cream + raw sugar, pureed balsamic cherries, Seedy GF maple syrup granola, fresh cherries & mint Quaker Oat+Milk Chia seed Breakfast Pudding {below right}: Stir heaped 2 tbsp of chia seeds into the oat milk in cognac glasses. Let stand overnight. Top with fresh mango puree, fresh jamun puree, fresh diced mangoes, fresh mint and rose from the garden.
And then Salsas, Pestos and all the fun things in the world. Use a pesto in a sandwich, or toss a pasta into it. Else simply serve it with handcut home made hot chips!!Dahi badas or Lentil Dumplings in garlicky yogurt, the batter ready in minutes. You can do medu vadas, idli/dosa batter and so much more.
Last but not the least, frozen desserts. Think ice creams, fro yo, sorbets etc.Can your blender do all this {and more}?

When the Tropical Collection from Chumbak comes knocking at your door, how can you not fall in love with it? It’s fresh, it’s tropical, it’s everything you can celebrate spring with, a line you can usher summer in with as well! It’s an inspiring line, and immediately nudged me to do something fun. Take a look….
I played with the collection endlessly. It brings alive the child in you. You can’t take us Indians out of the our beloved tropics {for long at least}and you can’t take tropical out of India, so the collection is a sure win. I love the crisp, colourful feel, the energy it shares, the vibrancy it spills. The collection is inspired by tropical elements like palm leaves, pineapples, flamingos and the like.Here’s what I was inspired to do – Strawberry Pineapple Smoothies & Watermelon Kiwi Gooseberry Fruit Bowl. When we were young, my dad scooped or rather balled out watermelons and musk melons on our birthdays, then served the fruit chilled in fruit bowls. For some reason, just looking at the collection took me right back there, and before I knew it I was carving a fruit bowl. It’s the funnest thing to do for a pool party, kids birthdays, an evening pick me up in summer, or an anytime fresh healthy snack.I used kiwi stars, halved gooseberries and watermelon balls. I thought I’d throw in strawberry hearts too but forgot the in the fridge. Gah! Summer will see stone fruit galore, so the fun will double. You could do a stone fruit and berry inspired bowl. Or maybe set a watermelon granita in the melon bowl, freeze, slice and serve! No dearth of ideas when your life is flooded with inspiration.
Chumbak had a #spotthepineapple fun campaign to launch the collection. How can you be tropical and not have pineapple? So I figured I’d do a pineapple strawberry smoothie too. I freeze both strawberries and pineapple chunks, so this smoothie is the easiest thing ever. Throw in a cup of each, a cup or two of water, some sweetener, a dash of lime juice into the blender. Whirrrrrrrr it up and you’re good to go.That’s what the coming summer is going to ask for. Quick fresh foods that will keep the spirit light and happy. See how beautifully they paired with the Chumbak Tropical in the light of the afternoon setting sun? Such pretty hues that go so beautifully with the bougainvillea too. Same colours, tropical feel, and I am all set! There’s plenty of choice…
With a range of cushion covers that explode in bright colours, I think this is the best time for a summer makeover! Vibrant, vibrant, vibrant is all I think! Pineapples, flamingoes, elephants, flowers, geometric patterns {♥♥♥}, I want to redo my place! Oh and the sweet little owl too stepped out from a smitten golden ex Diwali into a rustic rainbow coloured creature. Can you imagine that the ullu {owl in hindi} went tropical too? I fell in love with this little fellow, toes and all!The other thing I really liked are the cookie jars. Spacious, clean lines, good quality airtight jars, and beautifully patterned, the counter tops will never be the same again. Even though I am not a gold person, I really like the golden cookie jar too. It fits in so well with the rest. And of course there is PLENTY MORE to the collection. I just picked a few.My all time favourite is of course the palm leaf pattern line. That has my name written all over it. It is fresh, understated, almost like each piece has been hand painted. The teacups are a generous size and stand tall. The pitcher is a winner and I would LOVE for it to sit on my counter. It pours well, it’s easy to clean and is an ideal size for milk or juice. Heck, it even doubles up as a stunning flower vase! It’s lovely to begin the day with for breakfast. Quick granola and fruit parfaits, omelette, toast, a glug of milk from the jug, coffeeeeeee … the leaf pattern is my kind of pattern. For salads too. The interesting bit is that the leaf pattern fits in to every time of the day, every meal too. From a crisp beginning in the morning for breakfast, to a soothing, lilting sun-downer feel, with calming, soothing hues.
Even the coordinated leaf platters are darling. I just find the leaf pattern very very refreshing, something anyone would love to own, serve on, put out for guests, hang on their wall as part of a plate collection. I shot with it a lot as you might notice.You can see I shot it the most. With flowers {poppies} for breakfast, with milk for breakfast too, with onion flowers just like that, then with the Strawberry Pineapple Smoothies & Watermelon Kiwi Gooseberry Fruit Bowl . That’s how versatile and handy it is. The great thing is that it pairs with almost every colour and meal. I’m thinking chilled lemonade through summer!

Ingredients
Strawberry Pineapple Smoothies
1 1/2cupfrozen strawberries
1 1/2cupfrozen pineapple chunks
2cupschilled water
Raw sugar as required
Juice of 1/2 a lime
Watermelon Kiwi Gooseberry Fruit Bowl
1small watermelon
1kiwi
1cupcape gooseberries
Fresh mint to garnish
Instructions
Strawberry Pineapple Smoothies
Place all ingredients in jar of blender and process until smooth. taste and adjust seasoning adding more sugar if required.
Garnish with slices of fresh strawberries.
Watermelon Kiwi Gooseberry Fruit Bowl
With a melon baller, scoop out balls of watermelon. gently remove any remaining flesh to take a bowl out of the skin. Carve the edges with a sharp fruit knife if you like.
Peel and slice the kiwi. Stamp out stars with a small cookie cutter.
Halve the cape gooseberries.
Toss them all and put into the watermelon bowl. Chill. Scatter fresh mint over it. Serve chilled.
Note
Run the left over watermelon and kiwi in a blender to make watermelon juice. Add a dash of honey, fresh lime and rock salt. Serve chilled.

Green Goddess Apple Cucumber Coconut Water Smoothie, quite nice actually! Packed with nutrition too. You might have heard about Spirulina. Well if you haven’t, it is one of the most potent sources of easily digestible vegetarian protein available, a powerhouse of nutrients available in nature. It is harvested form blue green algae present in water bodies, and has been used in food for centuries.The primary challenge is making sure the water that hosts the algae is non contaminated, and this brand is certified organic, cultivated in an environment free from pollution, ground water contamination, pesticides and herbicides.I used Spirulina powder for the first time with much apprehension. Not because I doubted the source or the nutritional value, but because I had been warned a plenty that it was an acquired taste. Since this dark green powder, almost jade like in colour, is harvested from algae from water, the first impression is of a very fishy, concentrated seaweed like aroma. Anything fishy doesn’t work with me, you can promise me it’s a 100% vegetarian never mind. The challenge is to use this superfood in ways that tease the palette to enjoy it everyday in a form that is easy and fun.
The positives are plenty, enough to make me reach out for a daily health boost. Spirulina is largely made up of protein and essential amino acids, and is typically recommended to vegetarians due to its high natural iron content. Time to make each drink a SuperDrink. Adding Spirulina is a nice way to include a highly nutrient rich Superfood in our daily diets which with only minimal effort. Seemed quite natural to begin the morning with a nutritional boost, so I thought smoothie. Green smoothie obviously!! With winter here, there are the juiciest apples from Kinnaur lining the bazaar shelves these days. Thought I’d keep it simple. So in went cucumber, honey, some coconut water since I had some on hand. The electrolytes in coconut water as a great substitute for plain water, so why ever not. Gingerly added 1 tsp of Spirulina and braced myself. I was pleasantly surprised!! The green jade came to life in seconds, an intense smooothie that looked like it meant business. A teeny taste later, and I threw in another teaspoon of Spirulina. No bad offsetting flavour, quite pleasant, naturally sweet too. Who would have thought?Spurred on, I experimented a little more. This Currypatta Buttermilk Lassi below is now a daily routine!

Happy with the success, I marched on to try yet another savoury version. It turned out quite pretty. Quite delicious as well! Here take a look. A Beetroot Buttermilk Spirulina Lassi as delicious as it was pretty! The recipe is simple. blend the following until smooth. 1 medium beetroot, microwaved for 3 minutes, or boiled, cooled, grated + 2 cloves garlic, grated + 250ml cultured buttermilk +1/2 tsp black rock salt + 1tsp roasted cumin powder + 2tsp spirulina.

Rich Spiced Hot Chocolate might well be the simplest thing to enjoy this season. It’s simple things that matter, and with recipes like these, ingredients are of prime importance. You can’t go wrong if you use good quality ingredients. This Rich Spiced Hot Chocolate is just that. Indulgent too. This is where dessert meets milk, a quintessential Indian favourite, a concoction you would find across North India. It’s simple, it’s bursting with goodness and flavour AND a big hit always. It’s quite similar to a thandai, infinitely customisable.Masala Kadhai Doodh is simply simmered with a powdered nut & spice mix in a large kadhai or wok for the flavours to steep and milk to thicken. Only with this high fat content milk, the time to thicken is substantially decreased. I used a mix of almonds, melon seeds, cardamom, nutmeg, a pinch of turmeric and saffron.We are a dairy loving home, and I set yougurt at home everyday. With quite a welcome high fat content, Mother Dairy’s Premium Milk yields far tastier home made yogurt, paneer, quark etc. It is also far easier to use in puddings, traditional kheers, halwas. With winter here a gajar ka halwa is calling my name. Simmered in this beautifully thick milk, I can only imagine how good the end result will be. What would be your favorite way to use this?

Ingredients
500mlMother Dairy Premium Milk
2-3star anise
1stick cinnamon
1/2vanilla beansplit
2tspbrown sugar
75gdark couverture chocolatechop
25ggood quality cocoa powder
Instructions
Place milk, star anise, cinnamon, vanilla bean and sugar in a heavy bottom pan and simmer for 15-20 minutes for flavours to steep.
Add the chocolate and cocoa powder, stir often to mix, and simmer gently until the chocolate melts.
Sieve and serve immediately, else steep for an hour, then reheat and sieve before serving.
Notes
Note: You can add a shot of Baileys irish Cream for an adult version. You can also add or remove spices as required. This also makes a nice chilled spiced chocolate milk. Stir well or sieve before serving.
