Addictive Pistachio Panna Cotta with Raspberry Sauce… colourful dessert you will love

Pistachio Panna Cotta with Raspberry Sauce … a gently set, smooth, soft no gelatine panna cotta, with pistachios really adding Spring feels. The bright, vibrant raspberries add just the right tang to every spoon of this dessert. You could use a strawberry sauce too or perhaps a deep saffron jelly to top it.

Hello Spring. There’s an energy in the air and everything feels lighter already. It’s a welcome break from a long, cold winter, though it’s turning out to be a very short Spring. We barely had two weeks of below 20C temperatures and now we’re well into the 30’s, a sign that summer is well on it’s way.

I had some pistachios left over from an earlier collaboration with the USDA and had been waiting to make a pistachio panna cotta for a bit. The set is never easy to get when you go the no gelatine way. It’s also not the same as a jiggly, smooth, jelly like classic gelatine panna cotta set because of differing properties of the plant based setting agent, agar agar. This is the brand I use. The good thing about using agar agar is that you can adjust the quantities, reheat the mixture and begin again if the set is not to your liking.

I reached this panna cotta set after several attempts. Even if the classic panna cotta jiggle was missing, the taste of this Pistachio Panna Cotta with raspberry sauce was sublime. Smooth, soft, gentle, rich, delicious, indulgent … pistachios can offer so much to a simple dessert, it’s amazing!

One look at the collage above, and you can easily tell that pistachio is one of my favourite ingredients in desserts. It’s also so absolutely versatile as a topping, a garnish for a pop of colour. Pistachios pair beautifully with some of my favourite flavours – saffron, strawberries, chocolate, rose, orange, mangoes, apricots, cherries, plums, vanilla too. And of course with raspberries like in the Pistachio Panna Cotta!

Pistachio Panna Cotta with Raspberry Sauce

I love using natural colours of ingredients in desserts and this pistachio panna cotta is one of my new favourites. The #nogelatine dessert is as simple as can be, and requires just 4 ingredients.

Ingredients

Pistachio panna cotta

  • 300 g cream 25% fat
  • 2 1/4 tsp agar agar
  • 100 g milk
  • 75 g castor sugar
  • 200 g pistachios blanched/peeled

Raspberry sauce

  • 85 g frozen raspberries
  • 25 g sugar
  • 1/8 tsp agar agar

Instructions

Pistachio panna cotta

  • Whisk together the cream, milk, sugar and agar agar in a heavy bottom saucepan. Simmer stirring constantly for 2-3 minutes to activate the agar agar.
  • Add the pistachios and blend until smooth.
  • Pour into molds and refrigerate to set overnight. If you are using silicon molds, you can place them in the freezer until frozen, then demold and leave in the fridge for 2-3 hours to defrost.

Raspberry sauce

  • Simmer together until soft and slightly thick.
  • Strain and use.

’tis the season and it’s the best time to enjoy a ton of baking with loads of flavour. I’ve had a field day this winter from loads of cookies to cakes to tarts … and now these eggless chocolate brownies. It’s wonderful how a splash of colour or an add of spices can uplift the spirits, make the holidays so fun! Try these wholegrain gingerbread cookies with a heart!

Pistachios and cranberries from the  United States Department of Agriculture made me do this! I’ve loved working with them and loads of nuts, berries and produce from America this holiday season. I love how colourful and Christmassy these brownies turned out to be. I’ve tried them with a gluten free sorghum/jowar ka aata as well as with all purpose flour and they work well both ways. My holiday season celebrates loads of colour so the bright green pistachios and deep red cranberries really set the mood right! It’s a simple good recipe that uses pantry staples, things you might have in the kitchen already.

Make sure you use quality ingredients to enjoy these and that’s all that really matters. With winter here, temperatures freezing this December, we’re at below 10C in the northern plains of India. With no central heating and freezing cold, the only important thing is to get the brownie batter into the tin as soon as it’s stirred together ?.

These are pretty fuss free and deeply chocolate, deeply fudgy too. Cut the eggless brownies into 4 for an indulgent serving, else into 9 squares for good nibbles. Either which way, they’re delicious.

Ingredients

  • 140 g 52% dark couverture chocolate melted, warm
  • 200 g sweetened condensed milk warm
  • 50 g all purpose flour/maida or 40g sorghum/jowar ka aata for GF
  • 3/4 tsp baking powder
  • 30 g pistachios peeled
  • 25 g cranberries roughly chopped
  • Topping
  • pistachios, cranberries, chocolate chips

Instructions

  • Preheat the oven to 180C.
  • Lightly grease and line a 6″ square baking tin.
  • Place all the ingredients in a bowl and mix until smooth.
  • Transfer immediately to prepared tin, level out and top with pistachios, cranberries and chocolate chips.
  • Bake for about 20 minutes until the top is glossy and firm. Tent the top after 10 minutes to prevent overbrowning.
  • Cool completely before cutting.

This cake is perfect for Christmas with the flavours and colours coming together so well! It’s the most wonderful time of the year and I hope you are baking a ton as well!

That’s a bit of what I’ve baked the last few weeks! This is the best time to bake and one of my favourite seasons. With winter at it’s peak, it’s wonderful being in the kitchen next to a warm oven. It’s also a time when inspiration is at it’s peak and ingredients and ideas dance in my head! Can you tell?

That lace collar though!! I love making a chocolate collar for cakes, a touch I always find special, one I’ve done for years. It elevates a simple cake to something special. It’s as simple as piping melted chocolate on a strip of parchment, waiting for it to get a little firm, then wrapping it around a frosted cake. Set the cake in the fridge until the chocolate is firm, 10-15 minutes usually, peel off the parchment…TADA!

Eggless Chocolate Pistachio Cranberry Cake

Ingredients

Eggless chocolate sponge

  • 210 g cultured buttermilk Amul plain chaach
  • 60 g oil
  • 100 g castor sugar
  • 1/2 tsp baking soda
  • 3/4 tsp baking powder
  • 1 tsp apple cider vinegar
  • Pinch salt
  • 15 g cocoa powder
  • 160 g plain flour

Chocolate ganache

  • 250 g cream, 25% fat Amul Fresh
  • 250 g 54% dark couverture chocolate chopped
  • 50 g American pistachios peeled, chopped
  • 35 g American dried cranberries chopped

Topping

  • Pistachio slivers, dried cranberries, edible flowers

Instructions

Eggless chocolate sponge

  • Preheat the oven to 180C. Line a 6″ Springform/loose bottom tin with parchment.
  • In a large bowl, add all the ingredients except the flour and give them a good whisk. Stand for 3 minutes until the mixture is slightly bubbly, then whisk in the plain flour. Transfer to the prepared tin and bake for 35-40 minutes, until the tester comes out clean.
  • Cool completely, then trim the top if required and slice into 3 layers.

Chocolate ganache

  • Place the chocolate and cream in a glass bowl and place over a double boiler until the chocolate melts.
  • Stir gently until smooth. Rest at room temperature, whisking now and then. Refrigerate about 2/3 for the piping on top, and keep the remaining to spreadable consistency for the filling.
  • Any ganache left over from the filling can be whisked back into the reserved ganache for piping.

Assemble

  • Place one layer on the serving platter and top with about 100g of chocolate ganache.
  • Sprinkle the filling with finely chopped pistachios and dried cranberries.
  • Repeat for the other layers. Frost the sides and top with the remaining ganache.
  • Garnish with slivered pistachios, dried cranberries and edible flowers.

The Eggless Pistachio Cranberry Christmas Cake is reminiscent of the old style bakery cakes that we devoured as kids, memories coming alive with every bite. The crumb is rich and light, the sweetness just perfect and the bite of pistachios and cranberries so satisfying. I like to blanch and peel the pistachios to get the beautiful green and though it’s a slightly tedious job, the results are so bright and cheerful. I save the peels for smoothies or soup so nothing goes waste!

Oh and I forgot to say that I flavoured the cake with fresh orange zest and it made ALL the difference. The colour was a warm orange and the flavours paired so well with the nuts and berries. I love that simple, natural everyday flavours can add so much oomph to a simple bake, lift it up so effortlessly, so deliciously. The chocolate chips are optional of course but we loved them in there because chocolate ♥!

Eggless Pistachio Cranberry Christmas Cake

… so simple to make and simply delicious, this is a festive bake that reminds you of the good old school bakery cakes. Buttery, rich and ever so satisfying, it's one I have baked several times this holiday season.
Makes one 4.5" x 7.9" loaf

Ingredients

  • 85 g clarified butter / ghee melted, warm
  • 110 g yogurt whisked
  • 40 g milk warm
  • Zest of 1 orange
  • 75 g castor sugar
  • 3/4 tsp baking powder
  • 1/4 tsp baking soda
  • Pinch of salt
  • 100 g all purpose flour maida
  • 25 g almond meal/ground almonds
  • 50 g American pistachio peeled
  • 50 g American cranberries chopped roughly
  • 50 g dark chocolate chips

Topping

  • American pistachios American cranberries, chocolate chips

Instructions

  • Preheat the oven to 170C
  • Lightly grease and line a loaf pan with parchment paper with a slight overhang to help take out the baked loaf.
  • In a large bowl whisk together the ghee, yogurt, milk, sugar, orange zest, baking powder, baking soda and salt.
  • Whisk in the flour, pistachios, cranberries and chocolate chips.
  • Transfer batter to loaf pan and even out.
  • Top with pistachios, cranberries and chocolate chips
  • Bake for approximately 45 minutes/until the top is light golden brown and the tester comes out clean. Tent the top with a sheet of foil after 20-25 minutes to prevent the top from over browning.
  • Cool completely, then demold.
  • The loaf is delicious warm as well but a little crumbly.

Note : The batter also makes 6 cupcakes. Bake at 180C/20minutes

    Saffron Cheesecake …the best thing ever! Smooth, beautifully flavoured, most addictive, so satisfying. ​I know I’ve said this before, but honestly, this is my ALL TIME favourite cheesecake, a recipe I’m sharing here today. Flavouring this beautiful recipe is a very special product, the best quality saffron I’ve ever used, and it’s from Tahmina International. ​There is a heart-warming story behind the brand, and how it contributes back to society; a brave story that helps communities in conflict zones.One whiff of Tahmina transports you into another world, and I’m not kidding. I use a lot of saffron, always ensuring its good quality. After all you can’t go wrong with the most expensive spice in the world!I still remember when my son came back home from school years ago telling me they had learnt about the most expensive spice in the world! He was most impressed by his mothers in-depth knowledge when she said must be saffron! And his eyes opened as big as saucers when I showed him some from my pantry. One of my favourite uses has been my own special version of the Indian rice pudding or Zafrani Phirini, a recipe that I fast tracked to make super simple. Of course, now I have a new favourite, this Saffron Cheesecake flavoured most luxuriously and deeply by Tahmina’s saffronThat brings me to Tahmina. The flavours became deeper chilling in the fridge overnight, the cheesecake beautifully fragrant. It tasted like heaven! Light, silky, smooth, sensuous, all the flavours tying in beautifully. It’s a luxurious yet simple cheesecake to bake. I often bake large cheesecakes, but this time chose to bake little and medium-sized ones.The fun part was dressing them up with the saffron mascarpone frosting, then adding the garnish. I love how pretty all the colours look, like a dessert worth celebrating. The Saffron Cheesecake can be made a day or two ahead, frosted a day ahead too. It holds really well, so in many ways is the perfect dessert for a special celebration.And one last word before I leave you, do try their Saffron Black Tea Blend too. I’m not a huge tea drinker but I love iced tea in summer. I made a cold brew with the tea bags {look at that colour!}, sweetened it with a little honey, and added pomegranate pearls to the glass. So refreshing, and bursting with saffron flavour. So potent! I’ve got another saffron dessert brewing in my head as I write. Another time perhaps…

    Saffron Cheesecake

    Saffron Cheesecake …the best thing ever! Smooth, beautifully flavoured, most addictive, so satisfying. ​I know I’ve said this before, but honestly, this is my ALL TIME favourite cheesecake. Flavouring this beautiful recipe is a very special product, the best quality saffron I’ve ever used from Tahmina International.

    Cook Time 1 hour
    Total Time 6 hours 10 minutes

    Ingredients

    Biscuit base

    • 200 g digestive biscuits
    • 25 g pistachios finely chopped
    • 50 g unsalted butter
    • 1 pinch saffron strands generous

    Saffron Cheesecake Filling

    • 150 g mascarpone
    • 175 g cream cheese
    • 300 g sweetened condensed milk
    • 200 g single cream
    • 25 g cornflour
    • 3 eggs
    • 1/2 tsp vanilla bean paste
    • 1 tsp saffron strands

    Mascarpone Saffron Cream

    • 100 g mascarpone
    • 50 g whipping cream
    • 15 g {1 tbsp} icing sugar
    • 1 pinch saffron strands generous

    To garnish

    • saffron strands
    • Pistachio slivers
    • Organic rose petals

    Instructions

    Biscuit base

    • Preheat the oven at 180C. Prepare one loose bottomed 8-9" round tin, or smaller tins as desired. Lightly grease the inside, and wrap the outside with heavy duty foil. Place on baking tray.
    • Place all ingredients except pistachios in jar of processor. Process until fine breadcrumb like mix. Stir in chopped pistachios.
    • Turn into prepared tin, press gently. Bake for 10 minutes. Cool on rack, then top with saffron cheesecake filling.

    Saffron Cheesecake Filling

    • Place all ingredients other than saffron in jar of processor. Blend for 30 seconds to a minute until well mixed together. {I used the Thermomix, Speed 7, 20 seconds}
    • Add the saffron strands and mix in on low speed {Thermomix, Reverse speed 4, 5 seconds}
    • Pour over biscuit base. Pour about 1 cup of water into baking tray. Bake 170c for an hour/until slightly firm to touch. Cool completely, then cover and chill overnight.

    Mascarpone Saffron Cream

    • Place whipping cream and sugar in a large bowl and whip to medium stiff peaks. Add mascarpone and whip on slow speed until blended, then add saffron strands and mix in on lowest speed for 20 seconds.
    • Transfer to piping bag fitted with star nozzle. Pipe over chilled cheesecake. Garnish with pistachio slivers, saffron strands and fresh, organic rose petals.

    Filipino Sans Rival Cake

    When they say butter makes things better, I never rival the thought. Even though I try and keep the butter under check most of the time, give me an utterly buttery challenge like this Filipino Sans Rival Cake, and I’m all game. This sort of indulgence can only be good indulgence, and of the unrivaled sorts!I happily got Novembers DB challenge moving pretty soon as it was a cake, and this is my birthday month. Time to lavish myself with love, I would have normally reached for my jar of coffee and immersed myself in a coffee cake. This time though it was reason enough to change my mind as I love the window on other food cultures, and a Filipino dessert was truly something intriguing.

    Catherine of Munchie Musings was our November Daring Bakers’ host and she challenged us to make a traditional Filipino dessert – the delicious Sans Rival cake! And for those of us who wanted to try an additional Filipino dessert, Catherine also gave us a bonus recipe for Bibingka which comes from her friend Jun of Jun-blog.“Sans rival” means “without rival” and any Filipino will argue hat this is true. Although it’s one of the most popular desserts in the Philippines, its origins are certainly French. In the 1920’s to 30’s there were many Filipinos who went abroad to study. A good number went to France and learned many French cooking techniques which they then brought home. A Sans Rival is made with layers of dacquoise, typically using crushed cashews, with very rich French buttercream frosting. The dacquoise is allowed to bake and dry to a crispy layer so that there is the crunch of pastry and nuts with the buttery, silky frosting.

    I absolutely love the idea of crisp meringue and have baked quite a few before  …  Apple Brown Sugar Meringue Pies, Strawberry Meringue Chocolate Layer Cake, Chocolate Pavlovas with Chocolate Mascarpone Mousse & Preserved Stone Fruit, Tropical Fruit Pavlova, Chocolate Meringue Strawberry Cream Slice, Chocolate Coffee Almond Meringue Cake … and now this challenge!A Sans Rival is traditionally made with cashews, and though I would have loved to go the cashew way, I had plenty of almonds and pistachios {my favourite nuts} on hand, so decided to use a combination of both. I also chose to stick to a non chocolate version, even though I was VERY tempted to make a chocolate buttercream.The dacquoise took the better part of the morning to make, what with laundry, kids at home and much more distraction than warranted, yet most of the hard work belonged to the oven. Did I tell you that parchment paper must be the best thing invented by man for bakers? I ALWAYS marvel at its properties, and of late, it is usually the only thing on my shopping list for folk visiting from overseas. It isn’t available locally here.This was an indulgent good cake and just seemed to get better with every nibble. The nutty meringue complimented the rich vanilla buttercream ever so beautifully and the meeting of textures was delicious. Once layered and rested overnight, the now slightly chewy meringue and the satiny vanilla buttercream created magic, the specks of vanilla adding to the beauty!

    It was worth the effort and a wonderful birthday cake for me! We loved it and it got over pretty soon, despite the fact that it was rich and calorie laden! It was one of those cakes that must be made to experience the variety that the world of pastry and cakes might offer … a beautiful balance of taste and texture. It was a good birthday! The ‘not-so-terrible-anymore’ teen made me this beautiful picture as a gift, black and white in ink. She spent 3 days doing it, while the ‘now-beginning-to-get-terrible’ lad made me a ‘wired up‘ card, complete with a circuit and batteries, where the eyes lit up when you pressed the tongue, and wrote a little verse too! I gave myself a cookbook {read yet another cookbook} … One More Slice! I could do with one more slice of the Sans Rival now though … it was that good!

    Sans Rival Cake

    Sans Rival Cake is a traditional Filipino dessert. It has crisp layers of dacquoise {traditionally cashew} sandwiched with French buttercream.

    Ingredients

    Almond Pistachio Dacquoise

    • 10 large egg whites room temp
    • 225 gm white granulated sugar
    • 1 teaspoon cream of tartar
    • 190 gm almonds
    • 50 gm pistachios

    French Vanilla Buttercream

    • 5 large egg yolks room temperature
    • 225 gm white granulated sugar
    • 60 ml water
    • 285 gm unsalted butter room temperature
    • 1 vanilla bean scraped

    Instructions

    Almond Pistachio Dacquoise

    • Preheat oven to moderate 160°C.
    • Draw 9″ circles on parchment paper.
    • In a really large clean, dry glass or metal mixing bowl, beat egg whites on medium until foamy (2 mins.). Sprinkle with cream of tartar. Gradually add sugar, a couple of tablespoons at a time, continuing to beat now at high speed until stiff shiny peaks form. (about 7-10 mins.)
    • Fold in nuts, reserving enough to use for decoration.
    • Divide meringue into four equal parts. Spread over the drawn out circles, evenly to edges. If doing batches, use fresh parchment paper and cooled pans for each batch. {I divided it oven 5 circles}
    • Bake in preheated oven for 30 minutes, or until golden brown.{Mine took almost 45-50 minutes as I baked 2 at a time} Remove the meringue from the baking pans while still hot; allow to cool slightly. Peel off the parchment paper while it is still warm, it is difficult to remove sometimes when they have completely cooled.

    French Vanilla Buttercream

    • Put the egg yolks in a mixing bowl. Beat at high speed until the yolks have doubled in volume and are a lemon yellow.
    • Put the sugar and water in a heavy pan and cook over medium heat, stirring the sides down only until all the sugar is dissolved and the syrup reaches 235°F/112°C (or thread stage).
    • With the mixer on high, very slowly pour the syrup down the sides of the bowl, until all has been added. Be careful as the very hot syrup could burn you if it splashes from the beaters. Continue beating on high until the mixture is ROOM TEMPERATURE (about 15 mins). Still on high, beat in the soft, room temperature butter a tablespoon at a time. Add flavoring after you beat in the butter. Refrigerate the buttercream for at least an hour, and whip it smooth just before you use it.

    Sans Rival Assembly

    • Set bottom meringue on cake board with a dab of butter cream to hold it in place. Spread a thin layer of buttercream and then place another meringue on top. Repeat with a thin layer of buttercream, meringue, thin layer of buttercream, meringue, and finally buttercream the top and sides. Decorate with reserved nuts.
    • Refrigerate until ready to serve. It is easier to cut cold. Refrigerate until ready to serve. It is easier to cut cold. {May freeze.}
