I penciled in “Gift certificate for a flu shot.” Erma Bombeck Wish you all A Merry Christmas, May the Joys of the season Fill your heart with goodwill and cheer. Garam Masala Fruit Cake … a twist to the traditional, my recipe from scratch!
A Christmas Fruit Cake with a twist. Have you ever added garam masala to your fruit cake? You really should try it. It doesn't add curry flavours to your cake, I promise. It adds deep warm winter flavours that mingle with the fruit ever so deliciously, you'll wonder what kept you away so long.

MANGO KULFI … Traditional Indian Ice Cream
The idea of using pistachios and almonds slightly ground or rather finely chopped in the blender is certainly novel. I've never heard of it before, and it's quite genius. It helps thicken the cream, and distributes a beautiful nutty flavour though out the ice cream, making it almost luxurious, a royal serving!

Saffron Pistachio Yogurt Ice Cream…Happy IWD
“I’d much rather be a woman than a man. Women can cry, they can wear cute clothes, and they’re the first to be rescued off sinking ships”Gilda Radner This frozen dessert came out more beautifully than I thought it would. I have been meaning to post it for a bit, but something or the other kept cropping up. The hub sang praises with every spoonful, & no, not because he wanted another helping, but because he truly enjoyed the flavours. Saffron & pistachio compliment each other perfectly, in colour & in soul! It was more creamier than I imagined it would be, it did have a slight tartness of yogurt…

Saffron Indian Rice Pudding … sweet indulgence
“I haven’t had the rice pudding of my life today. But I guess I lost that opportunity with the end of my childhood.”William Rice The magical combination of the holiday season & winter gives rise to many rich dessert making opportunities. The nip in the air makes it all the more enjoyable, & dare I say, somewhat guilt free. This is an indulgent pudding we enjoy once in a while…an eggless Indian rice pudding, a recipe I have concocted over the years, & often make on the go. The quality of rice changes from time to time, but the pudding is quite forgiving. Add some milk if it is too…

Saffron Pistachio Kulfi … craving kulfi
“Ice cream is exquisite. What a pity it isn’t illegal.” Voltaire Here’s an ice-cream with a difference…an Indian dairy-based frozen dessert. Guess what? You don’t need an ice-cream machine for this!! This is a popular end to Indian meals, a rich & creamy ice-cream, which can be made in many ways, & many flavours. Mango is fast becoming a flavour of choice as far as the kulfi goes, but traditional flavours remain cardamom, saffron & pistachio. This particular recipe works with reducing the quantity of milk to a third by cooking. Another recipe I often use has condensed milk…faster & as delicious. I tried this method since I had run…
