A TOAST TO ROASTED GARLIC…SPAGHETTI & FOCACCIA…& another award!
“Garlic is a habit and a passion.” Kim Upton, Chicago Sun-Times Of Spaghetti & Vegetables… this one’s a combination full-of-flavour! Bursting with flavour…an incredibly delicious focaccia! Ever since I read that Casa Bencomo has a huge jar of organic garlic waiting to be used up, my minds hit the garlic trail. Am sure the jar at Amy’s end is history, but my pursuit in never ending…garlic is one of my favourite ingredients. I was at a loose end for a meal one day…rummaged in the fridge & found bell peppers. Had a couple of heads of garlic & spaghetti. The Pasta Bible has place of honour on my bedside these…

TOMATO-CARROT SOUP…DELICATELY FLAVOURED WITH STAR ANISE
“Men are like soup: you always want to have one on the back burner, just in case.”Unattributed feminist quote Tomato-Carrot Soup with Star Anise Tried my hand at a tomato-carrot soup this morning, flavoured delicately with a spice that has intrigued me endlessly over the past few days. None other than the pretty star anise ! A nice & gentle vegetarian soup, beautifully flavoured & great for the winter chill that has descended upon us. This is an adaptation of a soup my mother makes almost everyday in the winter months.Star Anise…the pretty spice! Star anise plays a key role in the slow cooked dishes that characterize Eastern Chinese cuisine.…

“Good soup is one of the prime ingredients of good living. For soup can do more to lift the spirits and stimulate the appetite than any other one dish.” Louis P. De Gouy, The Soup Book (1949) SOUP FOR THE SOUL…Roasted Veggie Soup! Its been a chilly winter so far, with winds threatening to sweep you off your feet. A trip to the market tempted me to buy an array of fresh veggies…& then I trotted back home to set to work. Roasting these vegetables enhances flavours…

KHEER / INDIAN RICE PUDDING…Special Occasion Food
“Seize the moment. Remember all those women on the Titanic who waved off the dessert cart.” Erma Bombeck Traditional Indian Desserts…KHEER / RICE PUDDING Here’s one of our great Indian desserts, quite similar to the English rice pudding, & much loved in our part of the world. The earlier recipe for rice pudding that I posted a while ago doesn’t use condensed milk; this one does, and tastes very rich & creamy too. It is a popular egg less dessert, & a great way to finish off a meal. I find the freshly grated nutmeg gives this a warm and comforting flavour. The raisins & almonds are quite optional, &…

Baking | SPICY CINNAMON SHORTBREAD…Think Spice Cinnamon!
“Cooking is like love. It should be entered into with abandon or not at all.” Harriet van Horne SPICY CINNAMON SHORTBREAD This is a sweet & spicy shortbread, not the traditional sort, because I made it with brown sugar that gave it a very different texture. In addition, I went further and sprinkled the tops with a mix of brown sugar & cinnamon before baking, which enhanced the flavour of cinnamon! Flowers on stars!! I love the ‘Think Spice’ monthly event at Sunita’s World. It does make you put on your thinking cap, and actually think the spice…at least with me it does! Can you imagine…I been thinking ‘Cinnamon’, her…
