PITA + PANINI = PITANINI…Crossover bread!!
“The Sky is the daily bread of the imagination” Ralph Waldo Emerson There are 2 posts racing each other in my head at the moment, & I’ve got to panini first. The other one is about herbs, thyme & oregano, which I shall write about soon. Made Panini Rolls a couple of days ago, which I had saved off Nic’s blog @ Cherrapeno last year when she had posted them for Zorra’s World Bread Baking Day. I’ve been wanting to make them for a while, but while winter was here, all yeastly tales were done away with… Now with spring here, birds chirping, butterflies whizzing around, I’m back to my…

Saffron Pistachio Yogurt Ice Cream…Happy IWD
“I’d much rather be a woman than a man. Women can cry, they can wear cute clothes, and they’re the first to be rescued off sinking ships”Gilda Radner This frozen dessert came out more beautifully than I thought it would. I have been meaning to post it for a bit, but something or the other kept cropping up. The hub sang praises with every spoonful, & no, not because he wanted another helping, but because he truly enjoyed the flavours. Saffron & pistachio compliment each other perfectly, in colour & in soul! It was more creamier than I imagined it would be, it did have a slight tartness of yogurt…

Glazed lemon Cakes … just like Spring is here!
“Friends are like cupcakes in my pantry of memories.” Anonymous The weather has changed, Spring is in the air. Pretty flowers everywhere, & even though the daytime highs are much higher than normal, the mornings & evenings are just beautiful. There is frenzied activity of birds building nests, butterflies buzzing around… & in the last frame, goatherds coming in from Rajasthan to allow their sheep to graze here. These inspired cupcakes made me feel like Spring. I got a lovely comment from a blogger the other day. Everything about her comment made me feel so good. A bit from it …” I enjoy Indian food and am so lost since my…

Pancakes + Lentil = Lentil Pancakes
“Lentils are friendly—the Miss Congeniality of the bean world.” Laurie Colwin There’s been much talk of pancakes & Lent across blogs this past week. My mum mentioned some nice savoury pancakes made out of chickpea flour that she ate at a friends house the other day. The very thought appealed to me, & yesterday, when I was out of ideas of what to cook, I thought I’d try my hand at some pancakes, but using soaked lentils instead of flour. The equation sounded funny. Pancakes + Lent = Lentil Pancakes!!! LOL! Made these very simple & very delicious savoury moong bean pancakes stuffed with a mild cottage cheese filling. We…

PUMPKIN PANNA COTTA…Pumpkin Spice & All Things Nice!
“Ask not what your Pumpkin can do for you, ask what you can do for your pumpkin!” I walked into the bazaar the other morning to come face to face with a very excited vegetable vendor. He knows my glee at any new veggie or fruit that shows up locally, & always picks a few good ones & saves them for me. He was waiting with something new which he called Chinese ‘kaddu’ or Chinese pumpkin. It’s strange, but most new veggies that appear seem to bear a generic China name. The large garlic we use is referred to as China garlic & now this pumpkin too. I think it’s…
