“Condiments are like old friends — highly thought of, but often taken for granted.” Marilyn Kaytor STAR ANISE FLAVOURED SWISS ROLL with MARMALADE SAUCE I took some marmalade that I had made last month & spiced it up with star anise, cinnamon, ginger etc. Let it mature for a day…dreamt of a swiss roll last night & created my own dessert this morning. Very proud of this one because I thought it up in my mind, enjoyed the experience a lot & the roll came out looking quite nice. Tasted great too & is my entry for this month’s THINK SPICE! It should be entered into with abandon or not at all.” Harriet van Horne SPICY CINNAMON SHORTBREAD This is a sweet & spicy shortbread, not the traditional sort, because I made it with brown sugar that gave it a very different texture. In addition, I went further and sprinkled the tops with a mix of brown sugar & cinnamon before baking, which enhanced the flavour of cinnamon! Flowers on stars!! This recipe has finally been typed and blogged thanks to Sunita’s World, who runs a really interesting spice event every month. I think it’s a pretty neat idea, and also a great learning experience. Apple Crumble with pecans & cranberries… the best of holiday baking!
Winter just isn't without the aroma of a crumble baking. Deep smells of cinnamon wafting through the house feels like a big, warm hug. My crumbles always have to have a generous topping. It really adds an indulgence to the perfectly cooked soft spiced apples that are blanketed by the crisp topping. Pecans and dried cranberries add so much texture to the bake, it's addictive.
