They can be made with an assortment of Christmas cookie cutters, topped with coloured sugar crystals, sprinkles &/or M ‘n’ M’s . Do remember to make a hole on top of each cookie before baking; also, they need to be handled delicately whilst threading the ribbon. Known for its great digestive properties & medicinal value, ginger is widely used in cooking in this part of the world. I love the warm, earthy flavour it imparts to dishes it’s added to. I use ginger quite extensively, and thanks to Sunita’s spicy thoughts, have been given an opportunity to post a few recipes. With diversity being the spice of life…here goes! LEMON CAKE…Baked as a gift!!
“I feel a recipe is only a theme, which an intelligent cook can play each time with a variation.” Madam Benoit LEMON CAKE sans sour cream… Made my ‘twisted’ & ‘tangy’ lemon cake again…keeping in mind Zlamushka’s ‘Spoonful of Christmas’. This was a gift for a friend, and looked very pretty when dressed up. Convenient to gift too, since it’s already in a ‘case’! This time I used something very interesting…‘Lemon Sugar’ that my friend got from Ukraine. They have these satchets of lemon sugar that are very citrusy and add a lovely tang and kick to the cake. This recipe made 2 nice loaves…so we had one too! Yippee!!…

A CRUMBLE TO FALL FOR…a healthy Apple Crumble!

Cinnamon scrolls…adding flavour to the Crumble! A twist to the regular crumble to make it healthier. I have substituted the butter for margarine, and lightly toasted (or roasted) the oats to bring out the crunch and flavour. Apples, cinnamon & walnuts bring out quite the best in each other…as far as taste, colour and warmth go. The only thing missing are the twirling leaves when the south wind blows!! Guess we can…

It hurdles the language barrier, makes friends among civilized people, and warms the heart.’ Samuel Chamberlain GRILLED LAMB CHOPS This is a nice, feel-good, sort of dish (doubles up as finger-food too), which we like at home for a change from curries etc. The ingredients can be increased or decreased to suit personal tastes…we love the tanginess of the meat off the bone. I grill these sometimes, and at other times pan cook them. These can be served with mashed potatoes/oven baked fries, grilled veggies, a dip/chutney, green salad, dinner rolls or naan bread.
