This version of wholegrain, eggless Anzac Cookies is nom nom nom good! I can have nibble them all day long. They are nice, chewy if you like them them that way, and crisp if you bake them longer! I love the flavours trapped within – brown sugar and butter create some delightful butterscotch like magic, while walnuts and oats lend it great texture!

Eggless Saffron Thandai Cream Cake (Suji Cake)- Happy Holi
This cake turned out more special than I imagined. The textures and flavours all came together in perfect harmony, and the dense moist cake literally screams holi. Thandai mix in the filling flavoured the cake beautifully, and the sprinkle on top gave it added texture and flavour. The cake is a twist to my saffron halwa tea cakes inspired by the Middle Eastern basbousa.
