Baking| APPLE & WALNUT BROWN BUTTER TARTLETS
“Stressed spelled backwards is desserts. Coincidence? I think not!” Author Unknown Yay, it’s November! Really surprised how silently it snuck up on me, and am still wondering what happened to poor old October. It went Q U I C K, but I’m not complaining as I love November, not least because it’s my birthday month. It is possibly the best month of the year in North India, the onset of a beautiful winter, temperatures more like a European autumn as Pam said the other day. Our winters see new leaves sprouting, chrysanthemums, carnations, oodles of farm fresh vegetables & bright sunny days. We wake up to slightly nippy mornings, with…

Baking | The original butter chicken … make yours at home
” If there is one place on the face of earth where all the dreams of living men have found a home from the very earliest days when man began the dream of existence, it is India.” Romain Rolland Today is India’s 61st Independence Day… & I decided to post something Indian today. In fact, India’s most popular gastronomic export to the Western world, which is Butter Chicken or Murgh Makhani. Quoting from a snippet in a tabloid debating butter chicken vs chicken tikka masala…”Many years ago, a man named Robin Cook, not the novelist, but the late Labour Party leader & Britain’s Foreign Secretary, had stirred an international gastronomic…

COFFEE and ROASTED ALMOND BISCOTTI…a handsome combination!
“I am not a glutton, I am an explorer of food” Erma Bombeck Coffee & Roasted Almonds…a handsome combination I have my biscotti moments…at times, I will suddenly alight & set off to make a biscotti with a ‘flavour of the moment‘ off the top of my head. This particular moments’ flavour turned out to be coffee & roasted almonds. A delicious, crisp biscotti! I made these some time ago, & am tempted to set off & bake some now…only problem being that I’ve cut a nerve in the palm of my right hand & am incapacitated as far as baking/cooking goes. Which leaves me with very little to do;…

Baking | SPICY CINNAMON SHORTBREAD…Think Spice Cinnamon!
“Cooking is like love. It should be entered into with abandon or not at all.” Harriet van Horne SPICY CINNAMON SHORTBREAD This is a sweet & spicy shortbread, not the traditional sort, because I made it with brown sugar that gave it a very different texture. In addition, I went further and sprinkled the tops with a mix of brown sugar & cinnamon before baking, which enhanced the flavour of cinnamon! Flowers on stars!! I love the ‘Think Spice’ monthly event at Sunita’s World. It does make you put on your thinking cap, and actually think the spice…at least with me it does! Can you imagine…I been thinking ‘Cinnamon’, her…

LEMON POUND CAKE SANS SOUR CREAM…my twist to the cake!
one of our favourite 'anytime' cakes…with a tangy, fresh lemon taste and a light crumb. Doesn’t need icing, and is lovely for an evening tea. I've worked on the recipe for a while to find a good substitute for sour cream. This cake always gets me rave reviews.

POUND AWAY, POUND AWAY… It’s the Mocha Chocolate Chip Pound Cake
My vote for an everyday/on-the-go cake goes to the Pound Cake!! Its the one cake that can eaten without frosting, or then spruced up with a ganache or drizzled with chocolate...whatever!! Sturdy enough to go for a picnic, and can be fiddled around with to suit your tastebuds.
