VANILLA CUPCAKES FOR CHISTMAS
OK…am back again. Yesterday & today were busier than I imagined they would be. I got literally talked into volunteering to make , hold your breadth, 80 cupcakes for a Christmas party for a little play school nearby! They were in a bit of a soup, & I eventually volunteered to bake. The only memory of yesterday morning is of the muffin trays going into the oven & out!! There were cupcakes as far as the eye could see. And then the usual rush…off to school to pick the kids after guitar etc. Hmmmmmmmmmmmmmm…this morning went in meeting with teachers before school broke-up for the holidays, and icing stars onto the cupcakes. They’ve been boxed and delivered!! Always enjoyable after the job has been done!
Ingredients:
Flour – 2cups
Baking powder – 2 tsp
Salt – 1/2 tsp
Butter – 1/2 cup
Sugar – 1 1/4 cup
Milk – 1 cup
Vanilla Essence / extract – 1 tsp
Eggs – 2
Method:

Preheat the oven to 190 degrees celsius. Line or grease the muffin pans.

Sift flour + baking powder + salt 3 times. Keep aside.

Cream butter + sugar well.

Add vanilla + eggs and beat well.

On low speed, beat in flour mix + milk alternatively in 3 lots.

Fill each muffin pan to 3/4th depth, and bake for 20-25 minutes till done.

Remove from muffin pan immediately & cool on racks.

Makes approximately 18 muffins.

For the 2nd lot , if you make 6 muffins in a 12 pan tin, fill a little water in each of the empty cases to ensure even baking.

Drizzle with melted chocolate.

Last year, baked 250 of ’em for an event at the kids’ school…can understand what you mean by the trays going in and out…it seemed as if they were everywhere…

wow! the decorations look lovely. i want to get one of those cupcake trays. are they called by any other name? what kind of stores sell them? I tried a few shops that sell crockery but they didnt have it.

Thanks Nags,Got them from the US . They’re called muffin trays. They come in 2 sizes; for 6 & 12. You can also find mini-muffin & jumbo muffin trays there. Haven’t seen them here in Delhi.
Hi Purnima…thanks for all the compliments:0).The curious little stars etc are hanging tree ornaments in zardozi that I picked up for our tree a couple of years ago in Delhi. Really pretty aren’t they?

Deeba,yes indeed!The hangings in zardosi are way tooooo pretty and guess what..the craving for having cupcakes reached its height when I read this post in morning, I baked your perfect measure (18 regular muffins no more, no less)vanilla c.c tks to you and the lady whose recipe you baked frm! There are only 4 cups left with my both kids absolutely loving them, unexpected guests too thankfully visiting and getting a treat! Thanks a zillion Deeba! Deeba, of my limited baking experience n skill, this was one cake which I baked while in Mumbai, my sil, mil and all other family members went ‘superbbbbb’ on it, cake vanished in matter of minutes! But trust me, getting my hands on unsalted butter was one big ordeal, had to get my sil buy fresh one frm Pune!! Tks so much for sharing this cake – mine seems to b borrowed glory (recipe-urs, glory – to me 😉 ) Wd u mind sharing which butter u use for ur baked goodies?

Deeba, truly have lost count as to the no. of times I baked this glorious cake! I am baking one part as I type this note of thanks to you..also as u keep experimenting, last time I baked these (17th to celebrate my dad n bro’s bday’s -same day born!!) I happened to keep them after 10 mins of cooling in a close lid container..4 were out due to space limit of container. The difference was..ones those were out were dry on the outer side, but the container ones were moist n fluffy!! Now thru trial n error..the path to moist cakes is wt me! 😀 *can’t preci this!*
