MALLOWS ANYONE? It’s the DARING BAKER time of the month!
“Be daring, be different, be impractical, be anything that will assert integrity of purpose and imaginative vision against the play-it-safers, the creatures of the commonplace, the slaves of the ordinary.”Cecil Beaton The July Daring Bakers’ challenge was hosted by Nicole at SweetTooth. She chose Chocolate Covered Marshmallow Cookies andMilan Cookies from pastry chef Gale Gand of the Food Network. In Nicoles words, “I’m a huge fan of Gale Gand, I have tried a lot of her recipes and they are such a huge success. For July’s challenge though I wanted to try something different and I wanted to do Gand’s version on my favorite store bought cookies which are the…

Fresh Peach Ginger Peasant Cakes … a vegetarian twist to Julie & Julia’s clafoutis!
“I think the inner person is the most important. . . . I would like to see an invention that keeps the mind alert. That’s what is important.” Julia Child The release of Julie & Julia has led to a Julia Child wave among blogs, food blogs in particular. Elle’s New England Kitchen & Food Blogga featured some beautiful blog posts on the film. Do head for their blogs as Elle & Susan have some sweet sound bites on the film. The film’s official blog, Julie & Julia also is well worth a visit. The other day I saw a beautiful Cherry clafoutis that Val posted @ More Than Burnt…

LOW FAT ROASTED PEACH & PLUM EGGLESS ICE-CREAM…Time to Social-ice!
“My advice to you is not to inquire why or whither, but just enjoy your ice cream while it’s on your plate – that’s my philosophy”Thornton Wilder I had peaches. I had plums. I had a firm grip on the whisk & the ice-cream scoop! Did I mention a firm resolve to make ice-cream before July flew right by? Does anyone know what’s happening to the summer months? Everyday flies by so fast that I’m having a tough time keeping up with July. Announcing July as the official National Ice Cream Month is a deliciously wicked way to make July enticing… “Now, Therefore, I, Ronald Reagan, President of the United…

OLIVE OIL BROWNIES with ROASTED ALMONDS…Mmmmm delicious!
“Chocolate is the only aroma-therapy I need.” Jasmine Heiler There was nothing for the kids school snack box, so I thought I’d do a batch of sandwiches. Of course, the teen vetoed my idea & looked decidedly deadpan at the very suggestion. Why do I bother asking? That set me thinking. Rummaging through my blog, I decided to make a batch of these olive oil brownies for them the next morning. Lined everything up on the counter, roasted the almonds, & wound up for the night. Was up early the next morning, as sleep abandoned me for some insane reason, & hit the kitchen. These brownies are a breeze to…

CHICKEN RICOTTA LASAGNA…my best yet!
“The clever cat eats cheese and breathes down rat holes with baited breath.”W. C. Fields My fascination with fresh home made soft cheese continues. Vera’s blog, Baking Obsession, is constant inspiration, & I went back to make some ricotta for the second time. the first time I made it with her recipe was for the Daring Cooks Zuni Ricotta Gnocchi, where the ricotta was wonderful in every way, but not so the gnocchi, which floated away in gay abandon. This time I was making some to add taste to a lasagna recipe which was taking shape in my mind. I wanted creamy & cheesy, but with soft fresh cheese, not…

Chocolate Genoise Cake with Mocha Mascarpone … cake nirvana
“All the world is birthday cake, so take a piece, but not too much”George Harrison I don’t think it’s going to be easy going back to regular frosting or whipped cream again. This was my maiden attempt at making homemade mascarpone, & I cannot believe how luxurious cream can get. Bless the Italians. Panna Cotta has been on my faves as dessert for long enough; now along comes mascarpone! WOW!! I bought a local brand of mascarpone a while ago, used it with Balsamic Strawberries here, though the dessert was delicious, the mascarpone itself was very disappointing. My homemade one just ROCKED! I made the mascarpone for my dad’s birthday…
