I stole the Stollen we made for Christmas with the Daring Bakers and baked it into a STOLLEN/BREAD PUDDING! Mmmm...just the perfect dessert for a cold wintry day, good to the last crust. Dried tart cherries, slivered almonds and a sifting of sugar dressed it up! Merry Christmas!

Everything about Marie Helen's Apple Cake for Dorie Greenspans new book is wonderful & well balanced - the fruit, the texture, the sweetness, the lightness; above all the power to satisfy. The best dessert we've had in a while ... fresh baked, almost steaming hot, a cake which unbelievingly delivered perfect light as cloud slices. I added a scraped vanilla bean to the batter, and flaked almonds on top. It's a designated winner in my book; one which I will make over and over again.

Baking | Lebkuchen Cream & Genoise Verrines with Apple Craisin Compote
I love verrines for their appealing looks. Play around with layers if you like. The space within is your canvas. Lebkuchen flavoured cream whipped to soft peaks mingles gently with the vanilla genoise cake crumbs, moistening it as you allow it to stand in the fridge for a couple of hours. It permeates the layers and infuses the lebkuchen spice aroma right through. This is a light dessert, yet quite satisfying. Include a layer of compote between the crumb and cream layers too if you like. Verrines are a wonderful playground of colours and textures.
