Here in the plains of North India, we’ve had a short, crisp Spring and much like last year, it lasted barely a couple of weeks. The transition these past few years has been very quick from a very harsh winter to an extremely hot summer while we try and hang on to a clutch of pleasant days that spell Spring.
Last week we saw Spring literally disappear when we hit 35C in the first week of March, then quite inexplicably for some strange reason, early this week we had a very welcome dip in temperatures. Very unexpectedly, we are happily back into the low 20’s, even touching 19C!
For just that, it’s time to celebrate Spring and how better can I do it than share a bunch of pretty desserts that can make you giggle with happiness, feel renewed and celebrate with nature. It’s all about colour, it’s all about natural flavours and seasonal produce!
I live life in colour and my desserts definitely follow suit. Colours and flavours inspired by seasons, my surroundings, flowers, birds, ingredients … everything is fair game! I’m constantly chasing birds that we are very fortunate to have at home, checking my little garden for new flowers, leave, herbs, fruit blossoms. I’m always fascinated, always inspired.
With the season changing, with Spring here, there’s so much renewed bird activity, it makes my heart sing. Just adds to the joy of creating desserts, inspired by the beauty of nature that surrounds us!
Robins, bulbuls, parrots, peahens, elusive copper headed barbets, koels, little silver bills, Oriental white-eyes, swallows or drongos, the rare sighting of the grey hornbill, sparrows back from almost having disappeared a few years ago, 7 sisters or jungle babblers, pigeons by the hundreds, gentle doves, also Rufus Treepie and the chicks below …
My heart is full! To add to the joy, these days we have a ton of strawberries flooding the market, the tangerine/kumquat shrub is in full bloom, my mint is threatening to run wild, rosemary is exploding with new shoots, thyme is finally looking happy. All this makes me so happy too…
So here are a few of my favourite dessertsfor this time of the year. They’re all eggless of course because I think I’ve mastered the art of eggless baking quite nicely, and they’re all flavoured naturally. Au naturel ingredients, no added colours or flavours, desserts that are a lovely treat, each one different from the other.
Make them as they are or take inspiration from seasonal fresh produce or from nature and create your own version with ingredients you can source easily or perhaps already have on hand. Most desserts I make are quick, may look like a lot of work yet are very simple and straightforward. Many of them are make ahead, infinitely adaptable to different flavours and can be scaled quite easily. Also, since these are all eggless, they’re easily made vegan. For me that’s the joy of dessert, something for everyone!

Eggless Raspberry Chocolate Cake
An eggless chocolate sponge, deep delicious ganache, bright fresh raspberries topped with the smoothest and most luxurious mascarpone cream. The flavours do a magic dance on the palette, each spoonful delightful. The raspberries were quite special here though you can always use strawberries if you like. Makes 4 small cakes.
Find the best strawberries to make this simple yet stunning cake reminiscent of a Japanese sando. Perfect, same size strawberries will give you the perfect cross section! You could try this with generous sized, firm raspberries or cherries too.
Just 3 ingredients to make this naturally green, delicate and light eggless mousse. Deep pistachio notes with no added colour, this can be whipped up in 5 minutes. The texture is light as a cloud and the miniscule bits of pistachios really add a pleasing touch.

A delicious, simple dessert that is fresh and full of flavour! Tarts are easily the most underrated desserts, also quite easily the easiest desserts to make and this one is no different. It has a few of my favourite things – a quick no bake biscuit base, a blueberry compote which adds deep flavour and colour, then a smooth vanilla bean cheesecake filling that covers the compote lusciously.

It's now officially the season I love most where luscious strawberries paint the bazaar red, and the best oranges are here too. A one bowl, part wholegrain eggless sponge, baked in a favorite tart tin with an indent, to which I added orange zest. I loved the natural orange hue the cake took on. Strawberry season always means a burst of colour and these flavours pair beautifully together. It's a great cake for Spring & summer!
