Vegan Rose Coconut Pudding … simple 4 ingredient goodness!
The Rose Coconut Pudding sets beautifully, has a wonderful wobble to it and tastes like Spring. I flavoured it with a rose syrup for Holi but you can pretty much use any flavour you like. I tried one as a plain coconut version ad that turned out refreshingly good too.

Broccoli Green Garlic Coconut Cashew Soup … firm favourite! #glutenfree #vegan
Broccoli Green Garlic Coconut Cashew Soup! If someone had asked me a couple of months ago which my favourite soup was, it would probably have been the carrot orange, perhaps the mushroom rosemary. I would have NEVER expected this Broccoli Green Garlic Coconut Cashew Soup to top my list, yet that's just what happened! So I just had to share this smooth, silky, creamy soup with you, my shout out for #veganuary. It's #vegan & #glutenfree. For a nut free version, just skip the cashews, but please make it. It's quite the comfort food that's warmed us this winter!

Coffee Coconut Blancmange. An agar agar twist to this traditional pudding just because I'm still experimenting with agar agar! It's vegan, it's glutenfree & it's so pretty!

Pumpkin Coconut Cream Pudding #vegan #glutenfree
Pumpkin Coconut Cream Pudding. Pumpkin and coconut are a great combination and work well in these mildly sweet gentle vegan & glutenfree puddings. I've topped these with unsweetened coconut cream, then walnuts, roasted seeds and dried cranberries to tie in fall flavours.

Roasted Cauliflower Salad – making the most of vegetables! #glutenfree #plantfood
Grilled Cauliflower Salad is a great salad for winter, and also for spring. I have served this warm from the oven, as well as chilled overnight. It's addictive good both ways. I have to say I love it because the garlic just shines. You can play around with the dressing as you like.

These were everything they look like and more ... delicious, delicate, flavourful, smooth, satisfying, elegant, sublime. I think it's just one of those puddings that were meant to be.
