Aam Panna / Indian Mango Cooler … the quintessential part of an Indian summer, one of the first things I make when raw green mangoes begin showing up, something I make through summer, a recipe I have simplified so much that it’s now a no brainer! With just 4 basic ingredients and a recipe that cooks in under 5 minutes, Aam Panna doesn’t get simpler than this! Did I tell you it’s soul satisfying, entirely customisable to taste, uses simple basic ingredients available in your kitchen and it’s a make ahead recipe. Go ahead and make a large batch and sip this through the week, it’s that refreshing!

Indian Summer & Mango

Raw green mangoes are an inherent part of the Indian summer. They are an integral ingredient from chutneys, to pickles, to salads, to dals and stir fries, curries and so much more. Coolers of course. I’ve been making this Aam Panna / Indian Mango Cooler for years, and for years I’ve been making it traditionally like my mum used to. That process was always a little laborious yet I knew no better.

First soak the raw mangoes in water for a couple of hours, scrub them squeaky clean with a brush, pressure cook the whole mangoes until soft. Then cool, them until you can handle them, squeeze out the pulp, blend, add sugar or jaggery with black rock salt, roasted cumin powder. Soon you have a mango cooler concentrate that you can dilute as much or as little as you like. The process was quite involved yet worth the effort. It was always the best thing ever, greedily gulped down through summer and so I religiously made it this way!

Somewhere along the way I began to do things differently. After given the full green mangoes a good soak and scrub, I began using the water they were pressure cooked in to make the base of my cooler because I figured it was good. Made life a little simpler. I fished the softened cooked mangoes out, scraped the pulp out when easier to handle, added raw sugar or jaggery powder into the still almost hot remaining liquid with the pulp, then immersion blended it in the same pressure cooker, stirred through generous amounts of roasted cumin powder, some kala namak or Indian rock salt and hello, delicious cooler!

A few weeks ago I came across another recipe where peeled raw green mango chunks were simmered in a saucepan until soft, then sugar was added. It was blended then seasoned with black salt, chili powder and cumin powder. It caught my attention almost immediately because I had never seen our much loved Aam Panna made this way. I knew I had to try it soon because it skipped the hassle of pressure cooking etc. This appeared to be a really quick method. It stayed in my head.

London Summers

I was also headed for London soon, probably my 10th trip in the last two years as the better half is based there now, and I know he absolutely loves Aam Panna and misses it in summer. I thought I’d carry some for him like I did last summer. That was a huge surprise for him and quite a hit too! With the UK currently reeling under its 3rd or 4th unprecedented heatwave this year, the Aam Panna that I carried this year was a definitely a welcome surprise. I’m getting quite good at packing and carrying edibles like this, so if you need tips feel free to ask!

London Summer 2026

The temperatures here at home in India and in London are almost the same. Aam Panna saved the day and was quite the best thing to sip on while we stayed mostly with nature and in local parks. The first thing we reached for at home was always Aam Panna, the concentrate I carried there stirred into the best cooler ever! It might not be the prettiest cooler to look at but it tastes pretty amazing!

Back to the recipe! Just before I left for the UK, I tried making the Aam Panna using the new method and was amazed to find how simple it was – fuss free yet just as delicious. It fast tracked the process where there was now no need to presoak the mangoes any more, cooking them whole with the peels, wait for them to cool down slightly so they were easy to handle, scrape the pulp out etc. I was sold and this became my new way to Aam Panna or Indian Mango Cooler. Happy to discover this because the season was in full swing. Around the same time the very sweet folk at my favourite brand Devnow sent me some very beautiful glassware and vegan bone china and I decided to make yet another batch since the tall glasses were perfect for this summer cooler!

This time I decided to make the Aam Panna / Indian Mango Cooler process even simpler, not sure if that’s even a thing. I peeled and chopped the green mangoes, now at like 50c a kilo here, added a 1/4 cup of water and placed them in a heatproof glass bowl, and cooked them in the microwave for 3-4 minutes. Once soft, I added jaggery powder, black rock salt, some roasted cumin powder to the hot mixture and went straight in with an immersion blender. Within minutes I had the most delicious Aam Panna concentrate ready to spoon into tall glasses, diluted with chilled water served over ice, another dash of roasted cumin powder for added texture and voila, the best Indian cooler ever. Now with phalsa berries out of season, this is a staple in the fridge!

Roasted cumin powder and black rock salt add the quintessential Indian Aam Panna flavour to the cooler. For a slightly adult flavour, you could add a red chili or a slit green chili to the mix and leave it to infuse with a little heat if you enjoy a kick in your cooler, perhaps adding in a few fresh mint leaves before serving. It’s an interesting dimension to this rather simple, inexpensive summer drink. Mangoes have fibre and once you blend the pulp, the fibre breaks down adding beautiful body to the beverage. The roasted cumin with black rock salt and jaggery powder adds an earthiness to it which is very comforting, very satisfying and soulful. Should you not have jaggery powder on hand, you can add any sweetener of choice and any salt.

Equipment

  • 1 Heatproof Bowl
  • 1 Immersion blender

Ingredients
  

  • 500 g raw green mangoes {3-4 medium} peeled, diced
  • 1/4 cup water
  • 150-200 g jaggery powder to taste
  • 1 tsp black rock salt to taste
  • 2 tsp roasted cumin powder

Instructions
 

  • Place the diced mangoes with about 1/4 cup water into a heatproof bowl. Cover with a microwave safe splatter lid or cling wrap. Heat at full power for 3-4 minutes until the mango is soft when you check with a fork.
  • Add the jaggery and allow the mixture to cool slightly. Blend or immersion blend until smooth. Taste and adjust sweetness, adding more jaggery powder if required. If the mangoes aren't sweet enough, you could add a squeeze of lime juice.
  • Stir in the black rock salt and roasted cumin powder. This makes a concentrate.
  • Chill, dilute and serve over ice cubes.
