Strawberry Galette Recipe: Delicious Treats for Any Occasion

Rustic & Moorish Strawberry Galette … the joy of the freshest, luscious seasonal fruit in a quick and easy eggless tart is untold. A rustic galette has always been a favourite and often my go-to quick dessert that is great as a snack too, sometimes even an indulgent breakfast nibble. That it can go savoury as easily is another win win in my book, though today we’re here for sweet strawberries!

What’s not to love about a quick, buttery, delicious strawberry tart that celebrates changing seasons. Strawberries hold endless charm when it comes to desserts and I use them a excessively. Rich in nutrition, low in sugar, a great source of antioxidants and vitamin C, and also high in fibre, these berries are literally bursting with goodness.


In India, we’re lucky to see strawberries in season almost 4-5 times a year though this lot of berries was one I carried back from the UK on a recent visit! Tesco had the most beautiful, luscious red strawberries and it was impossible not to drop a few punnets into my shopping cart!

You can spot strawberries in so many different desserts I make, that burst of colour and flavour always makes me happy! This eggless strawberry galette is a great rustic dessert to make in a jiffy and it uses a generous helping of strawberries. I think blueberries might work well here too and I should try that soon. time. Blueberries are another favourite ingredient!

What is a galette, you might ask. A galette is a flat cake or tart / pie of sorts that has its origins in French pastry and comes from the word galethat means a flat cake. A galette a rustic, free form tart made of pastry often topped with fruit, though savoury galettes are very popular too.

This Vegan Roasted Pumpkin & Sundried Tomato Pizza Galette is a huge favourite at home, one that I make often! Think quality ingredients, think loads of garlic, think how much better can things get when pizza meets a rustic free form pie. If you’re thinking of a delicious savoury galette for a snack or meal, this is probably it! Mushrooms may be a great filling too, with cheese & nuts perhaps.

The pastry for the Strawberry Galette is egg free, very forgiving and behaves well. It’s possibly the most fun part of making a galette because of the rustic, moorish appeal that free form pie offers. The fact that it’s egg free and quite simple to work with is always wonderful.

The pastry is buttery and crisp and adds great texture and a good bite to the fruit filling inside, like any fruit tart should. Once cool, the strawberry galette slices really nicely too!

Let’s talk about my favourite part of this rustic free form tart, the filling. It is sweet like candy, screams of great flavour, has a slight berry tartness and has beautiful deep notes and amazing colour. I often use a sprinkle of almond meal between the pastry and fruit and that helps keep the pastry from getting soggy. That’s my little pastry secret and I hope it helps you too!

Eggless Strawberry Almond Galette

A quick, rustic and delicious eggless strawberry almond tart to celebrate the best strawberries. The pastry is butter, crisp, very forgiving and behaves well, the filling sweet like candy, and the almond meal helps keeps the pastry from getting soggy.

Ingredients

Pastry for a 12″ galette

  • 150 g all purpose flour maida
  • 30 g almond meal almond powder / ground almonds
  • 1/4 tsp baking powder
  • Pinch salt
  • 40 g raw sugar / desi khaand or castor sugar
  • 50 g clarified butter / ghee, cold or butter
  • 5-6 tbsp cold buttermilk plain chaas

Filling

  • 25 g almond meal almond powder / ground almonds
  • 350 g strawberries sliced
  • 1 tbsp cornflour cornstarch {10g}
  • 50 g raw sugar / desi khaand or castor sugar
  • 1/2 tsp lime juice
  • 1/4 tsp pure vanilla extract

To finish

  • 1 tbsp cream
  • 1 tbsp sugar
  • 1 tbsp orange marmalade, melted or honey, melted

Instructions

Pastry for a 12″ galette

  • Place all the ingredients EXCEPT the buttermilk in a large bowl and mix like a crumble to get the fat well distributed through the flour mix.
  • Gradually add the buttermilk, a tablespoon at a time, until the dough just about starts clumping together.
  • Draw it together into a ball and wrap in clingwrap. Chill for 30 minutes.
  • Alternatively, you can also add all the ingredients except buttermilk into a food processor and process to mix. Then gradually add enough buttermilk until the dough begins to clump together.

Strawberry filling

  • In a large bowl, gently toss together the strawberries, cornflour, sugar, lime juice and vanilla extract to mix. Reserve.

Assemble

  • Preheat the oven to 180C.
  • Roll out the chilled dough into a 14" circle on a sheet of parchment paper with cling wrap on top. I used the same clingwrap I had chilled the pastry in.
  • Sprinkle over the almond meal leaving a border of 2 inches all around.
  • Top with the strawberry filling.
  • Using the parchment paper as a guide, gently bring up edges in pleats, pressing them down over the filling gently to hold shape.
  • Brush the edges with cream and sprinkle sugar over.
  • Bake for 45-50 minutes until the edges are crisp and light golden.
  • Brush the fruit with melted orange marmalade or honey as it comes out of the oven. Leave to cool for a couple of hours on a rack.

Equipment

  • 2 bowls
  • 1 balloon whisk
  • 1 Electric hand beater
  • 1 Piping bag
  • 1 2A nozzle
  • 4" Dessert box

Ingredients

Eggless orange sponge

  • 105 g buttermilk cultured
  • 25 g oil
  • 50 g castor sugar
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp apple cider vinegar
  • Pinch of salt
  • Zest of 1 small orange
  • 85 g all purpose flour maida

Whipped cream

  • 150 g cream 25% fat , chilled
  • 2 tbsp icing sugar
  • 100 g cream cheese chilled

Strawberries for filling

  • 50 g strawberries similar size sliced for sides
  • 30 g strawberries chopped for filling
  • 15 ml Cointreau to moisten the sponge

Garnish

  • Strawberries, tangerines/kumquats, edible flowers, mint

Instructions

Eggless orange sponge

  • Preheat the oven to 180C. Lightly grease and line a 6″ tin with parchment.
  • In a large bowl, add all the ingredients and give them a good whisk.
  • Pour the batter into the tin. Bake for approximately 25-30 minutes, until the tester comes out clean. Cool completely, then trim the top.
  • Stamp out a 4″ square using the dessert box as a guide.

Whipped cream

  • In a large bowl whip the cream with icing sugar until light and slightly moussey.
  • In another bowl whip the cream cheese until smooth. Add the cream cheese to the whipped cream and beat at high speed until smooth and thick, 3-4 minutes. Transfer to a piping bag fitted with a 2A/round nozzle.

Assemble

  • Line the base of the dessert box with a layer of cake and drizzle with Cointreau. {You can alternatively use a sugar syrup}
  • Line the sides of the box with the strawberries slices.
  • Top with about 40g diced strawberries.
  • Pipe over with the cream filling.
  • Garnish with fresh strawberries etc.
  • Serve immediately or refrigerate until required.

Ombre Blueberry Cheesecake … no bake, fresh, exciting and deep flavours in this no bake cheesecake are sublime. Colours and natural flavours in quick, simple desserts is what I really enjoy creating. Hopefully I’ll have just as much fun this year as well working with desserts in colour, a ton of natural flavour and layers. I hope you have a colourful and exciting 2024 as well!

There’s something about berries that makes desserts interesting and exciting, delicious too obviously. Berries offer endless charm and endless ways to create dessert. Another great idea for desserts is playing with different hues of the same or similar colours to create creating ombre patterns. I’ve also found that chocolate often brings these desserts together beautifully!

Ombre layers are one of my favourite ways to dessert and this Ombre Blueberry Cheesecake turned out smooth, fresh and really delicious. Each spoonful was addictive, the berry flavours dancing on the palette!

Eggless Ombre Blueberry Cheesecake

The fresh, exciting and deep flavours in this no bake cake are sublime. Every spoon offers deep berry notes and then the hint of vanilla bean, dessert just like we love them! The one bowl eggless chocolate sponge at the bottom and the ganache on top really bring it all together deliciously!

Ingredients

Eggless chocolate sponge (makes two 4″ cakes)

  • 105 g buttermilk
  • 25 g oil
  • 50 g castor sugar
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • Pinch of salt
  • 8 g cocoa powder
  • 85 g all purpose flour/maida

Cheesecake filling

  • 300 g cream / 25% fat
  • 2.5 tsp agar agar
  • 50 g castor sugar
  • 100 g white chocolate chopped
  • 250 g cream cheese room temperature, whisked until smooth

Instructions

Eggless chocolate sponge

  • Preheat the oven to 180C.
  • Line the base of two 4″ round dessert tins with foil and the sides with parchment. In a large bowl, add all the ingredients and give them a good whisk.
  • Divide the batter between the tins, about 130g batter per tin. Bake for 20 minutes, until the tester comes out clean. Cool completely, then trim the tops.

Cheesecake filling

  • Whisk together the cream and sugar with agar agar in a glass bowl. Microwave for 30 seconds, whisk again. Repeat 1-2 more times until the cream is steaming, Alternatively, simmer on the stove. We need to reach 79C to activate the agar agar.
  • Add the white chocolate, cover and leave for 5-10 minutes until the chocolate melts. Stir until smooth.
  • Whisk the cream cheese with a little cream-chocolate mixture to loosen it, then whisk it all into the cream-white chocolate mixture until smooth.
  • Divide into 3 bowls – 225g each
  • Bowl 1. Add 1.25 tsp blueberry powder
  • Bowl 2. 1/2 tsp freeze dried blueberry powder
  • Bowl 3. Add 1/4 scraped vanilla bean

Assemble

  • Secure an acetate sheet around the cake.
  • Layer 1 – Pour half the dark blueberry filling (100g) over the cake and place in the freezer until firm on top, 30 minutes.
  • Layer 2 – Pour half the light blueberry filling (100g) over first layer and place in the freezer until firm on top, 30 minutes
  • Layer 3 – Pour half the white filling (100g) over the light blueberry layer. Place in the freezer for 3-4 hours until very firm, gently peel off the acetate sheet, then leave to set in the fridge overnight.
  • Top with a chocolate ganache if desired.

Eggless Raspberry Dream Cake… delicious pairings that are just so perfect! An eggless sponge moistened with Cointreau is topped with the tart ruby red fresh raspberries that make the heart of this dessert. Finished off with an incredibly flavourful raspberry cream, this dream cake is quite indulgent & satisfying.

If you’ve been here before or follow @passionateaboutbaking on Instagram, you’ll notice my love for desserts with a pop of colour, an edible flower too! My desserts are now all eggless and I’ve never enjoyed creating them as much as I do now. Going eggfree with baking was possibly one of the best decisions I made, something that has inspired me to think beyond my boundaries.

Take this Eggless Opera Cake for example. I’ve made a version with eggs for a Daring Baker challenge several years ago. If you had told me to go eggless with it, I would have politely declined, not as much as giving it a second thought! Cut to now, that Eggless Opera Cake turned out to be one of my most fun creations, something that satisfied the baker and dessert maker in me no end.

Think desserts, think colour, think flavours, textures … and think prettiness! I think the very word dessert should offer ‘poetry’ on a platter, a dish that looks as pretty as it tastes! Eggless chocolate sponge

  • 210 g buttermilk
  • 50 g oil
  • 100 g castor sugar
  • 1/2 tsp baking soda
  • 1 tsp baking powder

  • Pinch of turmeric optional
  • Pinch salt
  • 15 g cocoa powder
  • 155 g all purpose flour/maida

45ml Cointreau / raspberry syrup / simple lime syrup

150g fresh raspberries

Raspberry cream filling

  • 225 g cream cheese
  • 30 g icing sugar
  • 85 g whipping cream
  • 90 g raspberry sauce {recipe follows}

Raspberry sauce {Yield 90g}

  • 65 g frozen raspberries
  • 60 g sugar
  • 1 tsp cornflour
  • Juice of 1/2 lime

To garnish

  • Fresh raspberries mint leaves, edible flowers

Instructions

Eggless chocolate sponge

  • Preheat the oven to 180C. Line a 6″ tin with parchment.
  • In a large bowl, add all the ingredients and give them a good whisk.
  • Turn the batter into the tin and bake for about 40-45 minutes, until the tester comes out clean. Cool completely, then trim the top. Gently fit the cake into the dream cake tin {5.5x3inch}.

Raspberry cream filling

  • Whip the cream cheese with icing sugar until smooth. Reserve.
  • In a large bowl, whip the cream until stiff peaks.
  • Whip in the cream cheese mixture and the cooled raspberry sauce.
  • Put into a piping bag fitted with a 2A nozzle.

Raspberry sauce

  • Place all the ingredients in a saucepan and leave to macerate for 30 minutes.
  • Simmer over low heat until the berries break down, mashing them against the sides.
  • Once the colour is nice and deep, the berries have broken down completely and the mixture has thickened slightly, 4-5 minutes, take off heat.
  • Strain the raspberry sauce and cool completely. refrigerate until required. This can me made in advance.

Assemble

  • Moisten the cake generously with the Cointreau.
  • Top the moistened cake with fresh raspberries. Pipe over the raspberry cream, level out and leave to set in the fridge for a couple of hours.
  • Top with fresh raspberries, edible flowers, mint etc.

Note

  • Since the dessert is set in a dream cake tin and uses fresh berries AND a berry cream, it is best consumed within a day. To keep it for longer, consider making this in a glass trifle or dessert bowl .

Nothing is more pleasing than the play of flavours and textures in dessert and that’s why I love layered desserts. I love the idea of making them in dessert boxes where the layers are well visible and tempt you to dive right in.

This Nutella Dessert box literally ticks off all the boxes for a perfect dessert to tempt the Nutella lover and chocolate lover. It uses a clutch of ingredients most of which you might have on hand already, comes together quickly, is no bake, very very simple and it’s good to the last spoon, perfect for Valentines day!

The flavours are gentle and calming, and the biscuit crumbs add a really nice texture. Chocolate biscuit base, light moussey Nutella cream, deep and rich chocolate ganache are textures that come together in harmony, almost like they were meant to be!

In the past year and a half, I’ve made tons of small desserts, or rather desserts for two to four people. The good thing about small desserts is that they are easy to assemble or bake, and they get over pretty fast so you are ready to try something new soon.     • 40g Bourbon biscuit crumbs. Layer at the base of box.

    • 50g Nutella
    • 50g cream cheese, whisked
    • With an electric hand beater whip together the cream and Nutella until smooth, then whip in the cream cheese. Fit a piping bag with a 2A nozzle and fill it with the cream. Pipe halve the cream over the biscuit base.

    #3 Nutella Ganache

    • 50g cream, 25% fat
    • 15g 70% dark couverture chocolate
    • 25g Nutella
    • Heat the cream and add the chocolate into it. Stand for 5 minutes until the chocolate is soft. Add the Nutella and stir until smooth.
    • Pour the ganache over the cream and place it in freezer for 10-15 minutes until firm. {Reserve 1 tbsp of the ganache to drizzle over the top if desired}

    #4 – Top the Nutella ganache with 2 tbsp Bourbon biscuit crumbs.

      #5 – Pipe the remaining Nutella cream over the crumb layer and level off.

        To finish, edge the dessert shot with Bourbon biscuit crumbs.
