Gluten Free Peach Cherry Crumble … buttery, wholesome, delicious

Gluten Free Peach Cherry Crumble … one of the simplest, quickest to make and satisfying desserts for summer, the stone fruit crumble always gets my vote! This peach cherry crumble is quite addictive with a burst of flavour and deliciousness, an almost guilt free dessert! It’s a quick wholesome dessert which is one of the best ways to use the bounty of summer brings.

I’ve been making crumbles forever. I think the first crumble I ever made was when a Daring Baker friend, Judy Chiapinni, mentioned years ago that it was the best way to use seasonal fruit that you had an abundance of, or if they were about to spoil. There’s been no looking back. For me, if everything else fails, CRUMBLE!

I think the day I made my maiden crumble, I was hit by a revelation, maybe two! The first thing that struck me was how simple a recipe could be and how easily anyone could rustle up a crumble. It’s so basic. At best, you need a bowl and a fork {or fingers} if you have a limited kitchen, and an ovenproof baking dish. The possibilities are endless…

In my husbands kitchen in the UK where he’s currently working, a crumble is one of the first things I make when I’m visiting. I normally eyeball ingredients since his kitchen is really really basic, yet the crumble is always delicious! A crumble is quite a no brainer and there isn’t much that can go wrong …

Think apples and raspberries, blueberries, apple walnut, strawberries and apple with thyme, raspberries with pistachios, mangoes and peaches, sometimes a hint of ginger … any fruit I find in his fridge, any nuts in the pantry, I crumble. That said, my favourite season is when stone fruit appear at the local bazaar here in North India even though I do make quite a mean Apple Crumble all through winter!



Once summer is in full swing and stone fruits rule the roost, it’s quick crumbles for breakfast often. I play with the toppings depending on the ingredients I have on hand. Oats are usually always part of my crumble for the bite that they give. Otherwise a mix of wholewheat and all purpose flour, nuts definitely, raw sugar, clarified butter / ghee or salted butter … you get the drift!

I always find it fascinating how something so simple can be so so DELICIOUS! Dive into a warm, freshly baked crumble and you will know what I mean. It satisfies at so many levels. The bite of buttery oats and nuts on top, the baked fruit cooked down releasing their fruit juices underneath … all pure magic. Dive in just as is, drizzle some cold unsweetened cream over, else really enjoy it with a scoop of vanilla ice cream!

Peach Cherry Crumble

Crumbles are the best way to easily use the bounty of stone fruit summer brings. This peach cherry crumble is most delicious with a burst of flavour and deliciousness, an almost guilt free dessert!

Ingredients

Oat topping

  • 100 g whole rolled oats
  • 50 g khaand / raw sugar
  • 25 g almonds
  • 50 g salted butter chilled , diced

Fruit filling

  • 6 peaches chopped
  • 150 g cherries pitted
  • 2 tsp cornflour
  • 2-3 tbsp khaand / raw sugar
  • Juice of 1 lime

Instructions

Oat topping

  • Run the oats, almonds and khaand/raw sugar in a hand blender until ground to a fine meal. Add the butter and process to mix to a moist pea sized crumb.

Fruit filling

  • Stir together.
  • Preheat the oven to 170C.
  • Turn the fruit filling into a 7″ baking dish and level out.
  • Cover the filling completely with the oat topping, pressing gently into place.
  • Bake for 45-55 minutes until you see fruit juices oozing up the sides.
  • Serve warm or at room temperature.

Eggless Raspberry Dream Cake… delicious pairings that are just so perfect! An eggless sponge moistened with Cointreau is topped with the tart ruby red fresh raspberries that make the heart of this dessert. Finished off with an incredibly flavourful raspberry cream, this dream cake is quite indulgent & satisfying.

If you’ve been here before or follow @passionateaboutbaking on Instagram, you’ll notice my love for desserts with a pop of colour, an edible flower too! My desserts are now all eggless and I’ve never enjoyed creating them as much as I do now. Going eggfree with baking was possibly one of the best decisions I made, something that has inspired me to think beyond my boundaries.

Take this Eggless Opera Cake for example. I’ve made a version with eggs for a Daring Baker challenge several years ago. If you had told me to go eggless with it, I would have politely declined, not as much as giving it a second thought! Cut to now, that Eggless Opera Cake turned out to be one of my most fun creations, something that satisfied the baker and dessert maker in me no end.

Think desserts, think colour, think flavours, textures … and think prettiness! I think the very word dessert should offer ‘poetry’ on a platter, a dish that looks as pretty as it tastes! It’s another mouth watering tin cake box dessert inspired by the Eggless Mango Dream Cake I shared a few days ago. Eggless Raspberry Dream Cake

Ingredients

Eggless chocolate sponge

  • 210 g buttermilk
  • 50 g oil
  • 100 g castor sugar
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp apple cider vinegar
  • Pinch of turmeric optional
  • Pinch salt
  • 15 g cocoa powder
  • 155 g all purpose flour/maida

45ml Cointreau / raspberry syrup / simple lime syrup

150g fresh raspberries

Raspberry cream filling

  • 225 g cream cheese
  • 30 g icing sugar
  • 85 g whipping cream
  • 90 g raspberry sauce {recipe follows}

Raspberry sauce {Yield 90g}

  • 65 g frozen raspberries
  • 60 g sugar
  • 1 tsp cornflour
  • Juice of 1/2 lime

To garnish

  • Fresh raspberries mint leaves, edible flowers

Instructions

Eggless chocolate sponge

  • Preheat the oven to 180C. Line a 6″ tin with parchment.
  • In a large bowl, add all the ingredients and give them a good whisk.
  • Turn the batter into the tin and bake for about 40-45 minutes, until the tester comes out clean. Cool completely, then trim the top. Gently fit the cake into the dream cake tin {5.5x3inch}.

Raspberry cream filling

  • Whip the cream cheese with icing sugar until smooth. Reserve.
  • In a large bowl, whip the cream until stiff peaks.
  • Whip in the cream cheese mixture and the cooled raspberry sauce.
  • Put into a piping bag fitted with a 2A nozzle.

Raspberry sauce

  • Place all the ingredients in a saucepan and leave to macerate for 30 minutes.
  • Simmer over low heat until the berries break down, mashing them against the sides.
  • Once the colour is nice and deep, the berries have broken down completely and the mixture has thickened slightly, 4-5 minutes, take off heat.
  • Strain the raspberry sauce and cool completely. refrigerate until required. This can me made in advance.

Assemble

  • Moisten the cake generously with the Cointreau.
  • Top the moistened cake with fresh raspberries. Pipe over the raspberry cream, level out and leave to set in the fridge for a couple of hours.
  • Top with fresh raspberries, edible flowers, mint etc.

Note

  • Since the dessert is set in a dream cake tin and uses fresh berries AND a berry cream, it is best consumed within a day. To keep it for longer, consider making this in a glass trifle or dessert bowl .

Delicious Eggless Chocolate Chip Walnut Cookies … you are going to love them!

Wholegrain Eggless Chocolate Chip Walnut Cookies …. cookies as simple as they are addictive! There was a time I always had a jar of home made cookies on the shelf, baking them once a week at least, sometimes twice. Cookies gave way to desserts and other bakes, yet cookies remain one of my favourite things to bake. They are fuss free, use staple ingredients, allow easy substitution and scream comfort!

For me, it sometimes defies logic that someone should buy a packet of chocolate chip cookies when they can be made so easily with everyday ingredients and taste a million times better! Take a look at the list of ingredients on a packet of store bought ones and chances are you’ll begin baking these at home for good! Staple everyday ingredients, easy process, quick to bake and packed with the goodness of walnuts, I love everything about these Wholegrain Eggless Chocolate Chip Walnut Cookies. I also absolutely love using nuts in baking and desserts as you can see!

NOTHING can beat the taste of freshly baked homemade cookies! These Wholegrain Eggless Chocolate Chip Walnut Cookies are a fine example. Since they’re egg free, the tasting and nibbles begin at the cookie dough stage. Beware, even the dough tastes really nice! I constantly play around with ingredients and quantities, as I did this time as well. The results were very rewarding and these Chocolate Chip Walnut Cookies turned out quite addictive. Fresh out of the oven, it was honestly difficult to stop at one!

If possible, grab a good quality muscovado sugar to make these. I used only muscovado sugar this time around and absolutely loved the deep earthy notes the sugar lent to each bite. I did throw in a spoon of chia seeds too since they were staring at me sitting on the counter. Ingredients do that to me often, talk to me while sitting on my counter, imploring me to experiment with them! Does that happen to you too? I’m glad I threw the chia seeds in coz they worked well in here.

Wholegrain Eggless Chocolate Chip Walnut Cookies

Ingredients

  • 115 g unsalted butter soft
  • 100 g light muscovado sugar/ brown sugar
  • 100 g whole wheat flour
  • 50 g all purpose flour / maida
  • 1 tsp chia seeds
  • 1/2 tsp baking soda
  • 1/2 tsp vanilla extract
  • Pinch salt
  • 50 g walnuts chopped
  • 50 g dark chocolate chips

Instructions

  • Preheat the oven to 180C. Line 2 cookies sheets with parchment paper.
  • In a bowl of the stand mixer {or in a large bowl}, whisk the butter and sugar until light and fluffy.
  • Add the remaining ingredients and mix in at the lowest speed until incorporated.
  • Using a cookie scoop, measure out walnut sized pieces and flatten slightly. Top with chooclate chips.
  • Bake for 17-19 minutes until the tops get light golden brown and are firm to touch.
  • Cool completely on cookie racks.

Eggless Mango Saffron Pistachio Tart Cake … as delicious as it is pretty!

Eggless Mango Saffron Pistachio Tart Cake… Mangoes, saffron and pistachios come together to create magic, a cake worth every crumb! Hello mango season, I think this is my favourite season just because we are blessed by the best mangoes there ever were!

M is for May, M is for mangoes, or rather an abundance of mangoes. It’s probably the only way to survive the unforgiving, harsh Indian summer where the plains of North India sizzle at 45C-50C. We are quite happy to drown under a deluge of the king of fruits, the luscious mango that makes summer bearable, beautiful too!

If you stop by my feed on Instagram, you might instantly pick out my love for desserts in seasonal flavours, a touch of saffron, a sprinkling of pistachios, that finish with edible flowers or rose petals. For me, it’s always been the visuals and the taste, both equally important, both come together to tell the story like the screenshot below!

These days I’m smitten with mangoes as you might have already guessed. I love the pop of colour they add, I love how beautifully they can lift up a dessert, how well they compliment gentle flavours like rose, saffron, pistachio and how incredibly delicious they are! It’s a fruit we absolutely love to love on the subcontinent, and I believe it brings out the best of our creativity.

This Eggless Mango Saffron Pistachio Tart Cake brings together one of my favourite flavour combinations for summer, a celebration of all things Indian! You can find a load of these flavours in Indian desserts or mithai, and they always remind you of how beautifully the ingredients pair together.

Quintessentially Indian, our cuisine is a riot of colours with flavours like these, an inspiration to create pleasing desserts! I really enjoy doing just that …

The Eggless Mango Saffron Pistachio Tart Cake Recipe is an eggless cake baked in a special tart tin with an indent, a cake that turned out as delicious as it was pretty. The recipe is a simple one bowl part wholegrain eggless pistachio saffron sponge baked up beautifully in this favourite flan tin.

I doused the cake generously with a deep infused saffron milk, filled the indent of the flan tin {shared below} with the best mangoes of the season, then smothered them with a cream filling. Every slice of the cake is delightful and screams mango season. If you’re looking for the special mango cake this season, honestly this is it!

Eggless Mango Saffron Pistachio Tart Cake

Mangoes, saffron and pistachios come together to create magic, an eggless cake worth every crumb! Makes one 8" tart cake

  • 1 Flan tin

Ingredients

Eggless saffron pistachio tart cake

  • 210 g buttermilk
  • 35 g oil
  • 15 g clarified butter/ghee
  • Generous pinch saffron
  • 2 tbsp finely chopped pistachios
  • 100 g castor sugar
  • 1/2 tsp baking soda
  • 3/4 tsp baking powder
  • 1 tsp apple cider vinegar
  • Pinch salt
  • 50 g wholewheat flour/aata
  • 115 g plain flour/maida

Saffron milk

  • Generous pinch of saffron + 100ml milk + 1 tsp sugar steeped overnight

Cream filling

  • 100 g cream 25% fat
  • 1 tsp agar agar
  • 50 g white couverture chocolate chopped
  • 100 g cream cheese softened

Fruit filling to fill indent

  • 100 g freshly diced mango

To finish

  • chopped pistachios, diced mango, rose petals, mint etc

Instructions

Eggless saffron pistachio tart cake

  • Preheat the oven to 180C. Lightly grease an 8" loose bottom flan tin.
  • In a large bowl, add all the ingredients and give them a good whisk with a balloon whisk/electric whisk.
  • Pour the batter into the prepared tin, and tap on the counter to level.
  • Bake for 30 minutes, until the tester comes out clean.
  • Cool completely, then demold the cake gently and place it upside-down on the serving platter.

Cream filling

  • Place the cream, sugar and agar agar in a saucepan and whisk until smooth. Simmer over low heat for 2-3 minutes stirring often to activate the agar agar.
  • Pour this over the white chocolate and leave to stand until the chocolate melts. Whisk until smooth. Stand over warm water if required.
  • Whisk in the cream cheese just before you need to pour it in. Taste and adjust sweetness as desired.

Topping

  • Dice the mangoes and fill the indent with them then top the cake with them.

Assemble (see video}

  • Moisten the cake with the steeped saffron milk.
  • Fill the cavity with diced mangoes, then pour the cream filling over.
  • Place the cake in the fridge to set overnight.
  • Garnish with finely chopped pistachios, diced mangoes, fresh rose petals, mint etc

3 Ingredient Chocolate Pudding… Rich, deeply delicious, satiny smooth and ever so easy, anyone can stir this up in a matter of minutes. Nothing can comfort the soul like a good indulgent old school chocolate pudding.

This eggless pudding ticks off all the boxes. It uses simple pantry ingredients, is gluten-free, has no added sugar, cooks quickly on the stove top and needs just a few hours to set, so is a great make ahead option too.

It’s also delicious served warm, so win win, you can enjoy it as a great winter pudding too. Do make sure to use a good quality couverture chocolate to enjoy the depth of this dessert.

3 Ingredient Chocolate Pudding

Rich, deeply delicious, satiny smooth and ever so easy, anyone can stir this up in a matter of minutes. Nothing can comfort the soul like a good indulgent old school chocolate pudding.

Ingredients

  • 350 g low fat milk
  • 150 g 46% dark couverture chocolate chopped
  • 3 tbsp cornflour

Instructions

  • Whisk all the ingredients in a heavy bottom saucepan. Simmer, stirring constantly, until the pudding begins to thicken slightly like a custard. Take off the stove and whisk well. Let it cool for a short while, whisking on and off to prevent a skin from forming on the top. Pour into dessert glasses and refrigerate to set for 4-6 hours or overnight.
  • Dust the tops with cocoa powder and garnish with chocolate flakes, edible flowers etc.
  • Note: You can also whisk the milk and cornflour in a saucepan and simmer, stirring constantly, until it begins to thicken slightly. Take off heat and add in finely chopped chocolate. Stir until smooth.
  • Add ins: Instant coffee, cinnamon, orange zest, vanilla, garam masala, a dash of liqueur etc.

Biscoff Banana Bread… if there’s one bread to bake now, this is it! #noeggs

Biscoff Banana Bread … eggless, wholewheat, one bowl, fuss free and just so delicious, you must bake this soon! It might not look very pretty and banana breads generally don’t, but the taste, OH MY! This is the most addictive one I’ve baked yet, and I’ve baked many!

Sunday usually begins with baking my favourite eggless banana bread, and this time I gave it a Lotus Biscoff twist. Played around with ingredients yesterday what with a half jar of smooth Biscoff spread staring at me, and came up with the most amazing banana bread with deep caramel flavours.

My Eggless Whole-wheat Biscoff Banana Bread is very, very indulgent. It’s also very moist and satisfying. The simplest recipe ever, one bowl and hand mixed, this is a great breakfast, tiffin or snack option. Use oil instead of clarified butter/ghee and make this vegan since Biscoff is a vegan plant based product.

Dare I also say dessert? Yes, that too! I love to reheat thick slices, 15-30 seconds in the microwave, and serve them with a drizzle of melted Biscoff or a scoop of good quality vanilla ice cream! Enjoy!

Eggless Whole-wheat Biscoff Banana Bread

Eggless, wholewheat, one bowl, fuss free and just so delicious, you must bake this soon. It might not look very pretty but OH MY! This is the most addictive one I've baked yet.

  • 80 g clarified butter/ghee melted
  • 100 g smooth Biscoff spread melted
  • 165 g 2 medium ripe bananas mashed well
  • 100 g castor sugar
  • 180 g whole wheat flour/aata
  • 1.5 tsp baking powder
  • 1/2 tsp baking soda
  • Pinch of salt
  • 1/4 cup chocolate chips
  • To top
  • 3 broken up Biscoff biscuits & chocolate chips

Instructions

  • Preheat the oven to 180C. Line a 8″x4″ loaf tin with baking parchment.
  • Add the ingredients to a large bowl and stir lightly to combine until just mixed.
  • Transfer to the prepared loaf tin and bake for 40-45 minutes/until the tester comes out clean, tenting the top after 14 minutes to stop it from overbrowning.
